Cake Monday!!!!!

One of my co-workers has instituted “Cake Monday”

Kelly is also a fellow blogger. She and her husband Josh are Team by Team Cuisine…….Where Food And Sports Collide……….they have sports food fever!

I thought maybe Cake Monday was a new trend…….ok, it might turn into one……..but Kelly started to bring cakes on Mondays because, well it’s Monday and nobody likes Mondays and cake makes it easier to take……soooo true.

I hoped I would not be raining on her parade, but I thought I would aid in the beat the Monday blues and bring cake also.

I think our fellow staff members are really enjoying it, as we both are bringing home empty cake platters on Monday afternoons.

My offering this week was a moist tender white cake recipe that I got from Robyn Stone at Add a Pinch. Her cake is titled The Best White Cake {Ever}, and it was.

Truth be told, even though I was a bakery manager for several years, I had not delved into making a cake from scratch…….well ok that one time, but it was like sawdust. So I went back to the box!

So thank you Robyn for what is The Best White Cake Recipe {Ever}.

I used a real “way back” recipe for the frosting. It is made with marshmallow fluff. Which I can eat by itself right out of the jar……..I don’t even need a spoon, ok maybe a spoon, but if one wasn’t available, I would just dip my fingers right in.

Now, add some butter, powdered sugar, vanilla, and vanilla bean and you have a super duper yummy frosting. A perfect frosting for the white cake.

I decorated it up a little as my co-workers only deserve the best!

Best Ever White Cake

The Best White Cake {ever} Recipe from Add a Pinch


Ingredients

  • INGREDIENTS
  • • 1 cup (2 sticks) butter, softened
  • • ½ cup vegetable shortening
  • • 3 cups granulated sugar
  • • 5 eggs, room temperature
  • • 3 cups all-purpose flour
  • • 2 teaspoons baking powder
  • • ¼ teaspoon salt
  • • ½ cup whole milk, room temperature
  • • ½ cup buttermilk, room temperature
  • • 2 teaspoons vanilla extract

Instructions

  1. INSTRUCTIONS
  2. Preheat oven to 350º F. Prepare three 9-inch round cake pans with nonstick baking spray or coated well with shortening or butter and floured, taking care to remove all excess flour.
  3. Cream together butter and shortening until light and fluffy with an electric mixer. Slowly add sugar one cup at a time, making sure to fully incorporate each cup before adding another. Add eggs one at a time, making sure to fully incorporate each egg before adding another.
  4. Sift together flour, baking powder, and salt. Pour milks and vanilla into measuring cup and whisk together with a fork. Add to butter and shortening mixture alternately with milk mixture, beginning and ending with dry ingredients.
  5. Gently stir all ingredients until well combined. Stop mixer and scrape down sides and bottom of bowl, making sure to have all ingredients mixed well.
  6. Evenly distribute cake batter between cake pans and place pans into oven. Bake for 25-30 minutes, or until a toothpick or cake tester inserted in the center comes out clean. Remove and allow to cool slightly in cake pans for about 5 minutes, then cool completely on a wire rack.
  7. Frost cake as desired.

Marshmallow Buttercream

Ingredients

Scale
  • 1 cup room temperature butter
  • 1 (7-ounce) jar marshmallow creme
  • 2 cups confectioners sugar
  • 1 teaspoon vanilla
  • 1/2 vanilla bean split and scraped

Instructions

  1. Cream the butter until it is light and fluffy. Add the marshmallow creme. Beat for 2 minutes.
  2. Add the confectioners sugar, vanilla extract, and vanilla bean continue to beat for 2 minutes.

    1. It is slightly off white. You can certainly use egg white only if you want pure white. Or they do make a white food coloring.
