Veggie snacks are always a good idea, even if they are fried. A heart healthy oil like avocado is perfect. Avocado oil is so versatile, it can be used uncooked, for salads and dips, and it has a high smoke point, which makes it the ultimate frying oil.

Avocado oil also has some pretty good health benefits…lower blood pressure and improve arthritis, You can use it on your skin, it can lower cholesterol, and boost the absorption of nutrients. Do your research and always consult your Dr. if you have health issues.

If you read our blog you know that I really like to grocery shop…….I know goofy huh? Getting inspiration for recipes can come at any moment, and some of my best things ideas have been born while grocery shopping.

 Dippin Crunchy Broccoli Bites

A head of broccoli just jumped out at me last week. It was a picture perfect bunch….of which I did not take a picture….perhaps I was in awe of it’s beauty? Right next to the broccoli was a beautiful head of cauliflower……more on that next week. Needless to say they both went in the cart.

Fresh Homemade Buttermilk Ranch Dressing ……a recent recipe here a What the “Forks” for Dinner? was fresh and super yummy. It was also thick, which made me think dip, which made me think veggies. Boring…….I needed to jazz up some veggies.

 Dippin Crunchy Broccoli Bites

Enter the beautiful head of broccoli. Tempura maybe……no. Panko breadcrumbs are my fav for making things crunchy. Panko is lighter, airier, and crispier than regular breadcrumbs…. and they absorb less grease. Broccoli meet panko….a match made in heaven.

Mixing the panko with a bit of flour, parmesan cheese, and Italian seasoning , I dipped my florets in an egg wash and then the panko mixture.

About the florets. Cut florets from the bunch making sure you have a stem…. a.k.a dipper. When you reach the center of the bunch you will not be able to have the dipper, so save the center section for another use.

Dippin Crunchy Broccoli Bites took literally minutes to cook up….2-3 to be exact….wait that’s not exact, but you get the idea. Drain on paper toweling.

Serve immediately and be sure to make the  Fresh Homemade Buttermilk Ranch Dressing
as a dip.

Dippin Crunchy Broccoli Bites

Ingredients

1 large bunch of broccoli, cut into florets leaving a stem piece
2/3 cup neutral oil ( I used avocado)
1/2 cup flour
1/2 cup panko breadcrumbs
1/4 cup parmesan cheese
1/2 teaspoon Italian seasoning
1 egg, beaten with 1 tablespoon water


Instructions

Cut florets from broccoli bunch making sure you have a stem on each floret. One you can no longer cut florets with a stem save the remainder of the broccoli for another use.

In a small bowl beat egg with water.

In a medium bowl mix the flour panko breadcrumbs, and Italian seasoning until well combined.

Heat oil in a skillet, until hot, about 350* degrees.

Dip each floret in the beaten egg mixture then into the flour mixture.

Place coated florets in hot oil, standing on the floret so the stem is facing up if possible. Cook until golden brown, about 2-3 minutes, using tongs to turn so all the crumb mixture can brown. If the florets fall over it’s ok.

Remove to paper toweling to drain.

Serve immediately with  Fresh Homemade Buttermilk Ranch Dressing.
