Ok……better late than never…….I have begun to eat with a little more mindfulness. Don’t worry, I will still make a whole bunch of tasty meals, and desserts…….you know the mindless ones, but today the word of the day is FRUIT.

I always think fruit looks really good in the grocery store, so I buy it. I bring it home with every intent of eating it instead of cookies, or ice cream…….well, we know what normally wins…….wha, wha, whaaa……

So, this time I decided if I made a recipe out of it, it would go into me……..it worked. I wanted it to be a fancy, but healthy dessert………instead it was my breakfast. I guess it can be dual duty……..an anytime thing.

It really did turn out pretty. I am all about my food having a picturesque quality……..well, because we take pictures of it, but also because, people eat with their eyes. You can have the tastiest thing in the world and if it looks……for lack of a better world yucky! In my experience, no one will even try it if it doesn’t look good.

It was quite simple to make. I just mixed up fresh fruit, I had raspberries, blackberries, and grapes, but you can use any fresh fruit you desire. The presentation is the kiwi…….they just add that little something that pretties up anything you put them on.

Tip for peeling them…….cut both end off……slide a spoon between the skin and the fruit……..run the spoon around the whole fruit…..and ta da……the inside slips out in one pretty little piece. Ready for your Sweet Yogurt Fruit Cup.

I lined the inside of two glass serving dishes with the sliced kiwi, filled it with the mixed fruit, topped it with a greek yogurt sweetened with honey and brown sugar, sprinkled with toasted almonds, and just a pinch of turbinado sugar. I am a huge fan of the turbinado sugar……it adds a sweet little crunch to fresh and baked goods.

So, with a mindful intend, decide……..breakfast or pretty dessert…….perhaps both!!

Ingredients

Scale
  • 1 cup grapes
  • 1/2 cup blackberries
  • 1/2 cup raspberries
  • 3 kiwi, peeled and sliced
  • 2 tablespoons toasted slivered almonds
  • 1 teaspoon turbinado sugar
  • Topping:
  • 1/4 cup greek yogurt
  • 1 teaspoon honey
  • 1/2 teaspoon brown sugar
  • 1/2 teaspoon vanilla
  • 1/8 teaspoon almond extract

Instructions

  1. Mix grapes and berries in a medium size bowl. Set aside.Place kiwi slices in a decorative pattern around the inside of a glass serving dish. Pile fresh fruit in center of kiwi lined dishes.
  2. Mix all topping ingredients in a small bowl.
  3. Spoon over fruit and top with almonds and sugar
