Now this is a really quick go with recipe. Coconut Cilantro Lime Rice.I made this recipe to go with the Date Night Dinner recipe Spicy Honey Chicken. When having a spicy meal it’s always nice to have something creamy as a balance.

Creamy Rice Side Dish


Ingredients

  • 1 teaspoon olive oil
  • 1 can 13.5 0z Lite Coconut Milk
  • 2/3 cup brown jasmine rice
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1 clove garlic minced
  • 2 tablespoons cilantro
  • 1/4 cup sliced green onions

Instructions

  1. Rinse rice. Set aside. Place coconut milk, salt and oil in a 2 qt. saucepan and bring to a boil. Add rinsed rice and stir. Cover and reduce heat to simmer. Simmer 25 -30 minutes or until rice is cooked and liquid is absorbed. You may need to add 1/4 to 1/3 cup of water if the liquid is absorbed before the rice is cooked.Stir in garlic, cilantro and green onions. Serve

Notes

You can use regular rice instead of brown.

I have started using coconut milk when making rice instead of water when I want to have that rich creamy texture.
