It’s time for Sunday breakfast again………what oh what, to fix??????

You know, I have great idea, which I am happy to share……….How about Quesadilla Huevos Rancheros?

Quesadillas for breakfast you say………big question mark? Why not! Just fill them with eggs, scrambled with green, red, and yellow peppers, green onions, cheese and cilantro. Serve it up with sour cream and salsa and you have a south of the border breakfast.

It’s quick and easy, both to make, and to adjust the recipe if you are making for more than two! You can adjust for items you have on hand also………add bacon, or sausage, use a different cheese. Anything goes …….unless you don’t have eggs then, not so much.

These quick and easy Quesadilla Huevos Rancheros gives you more time for what Sundays are for……RELAXING!!!!

South of the Border Breakfast


Ingredients

Scale
  • 4 6-inch flour tortillas
  • 1/2 cup grated 4 Cheese Mexican blend shredded cheese
  • 3 eggs
  • 1 tablespoon each red, green, and yellow pepper
  • 2 green onions, thinly sliced
  • 2 teaspoons cilantro, chopped
  • 1/4 cup salsa

Instructions

  1. Scramble the eggs, with peppers and green onion in a skillet sprayed with non-stick cooking spray, until eggs are cooked.
  2. Spray tortillas with non- stick cooking spray. Place 2 tortillas on grill pan or skillet heat over medium heat.
  3. Top tortillas with the scrambled eggs, cheese,and cilantro, dividing equally Top with the other tortillas.
  4. Cook until the cheese melts, about 5 minutes., flipping over once. Cut into wedges and serve with salsa and sour cream.

Sunday morning breakfast at the Boyd’s…………Pizza????? Pizza you say……..not the kind that is cold and left over from the night before, but a hot from the oven breakfast pizza. Potato Crusted Breakfast Pizza!

It’s everything from breakfast formed into a pizza. Hash browns (crust), topped with eggs, bacon, and cheese. I have seen recipes for breakfast pizza before, but always on a bread type crust…………..  I guess that is like toast? But I liked the idea of crispy hash browns,  with a nice egg on top, and smokey bacon. The cheese is just an added bonus, after all who doesn’t like cheese. Tim put salsa on his, I’m that ketchup on eggs crazy person, so that was my choice, but we both tasted pre-condiment and it was great. So, whatever your condiment choice, Potato Crusted Breakfast Pizza is a nice change of pace for your Sunday breakfast.

Ingredients

Scale
  • Crust:
  • 120oz package Simply Potatoes, shredded hash brown style
  • 1 egg
  • 1/2 cup 6 Cheese Italian shredded cheese
  • 1 teaspoon Italian seasoning
  • Topping:
  • 1 1/2 cups 6 Cheese Italian shredded cheese
  • 6 slices applewood smoked bacon diced and cooked
  • 4 eggs
  • 1/2 teaspoon Italian seasoning

Instructions

  1. Preheat oven to 450*
  2. In a large bowl mix the hash browns, 1 egg, 1/2 cup cheese and 1 teaspoon Italian seasoning until well blended.
  3. On a pizza stone or cookie sheet sprayed with non-stick spray shape the potato mixture into a circle making a lip around the outside edge to form your crust.
  4. Bake crust in preheated oven for 20 minutes.
  5. Remove crust and top with 1 1/2 cups Italian cheese, the 4 eggs, cooked bacon and sprinkle with Italian seasoning . Return to the oven for an additional 15 minutes or until the eggs are cooked to your desired donees. 15 minutes makes the eggs over medium.
  6. remove from the oven and sprinkle with chopped parsley and cut into wedges to serve.

Notes

You may add more eggs depending on the number you wish to serve.

Candy and Pie………what could be better? I can’t think of anything!

Finding this recipe, after not making it for quite sometime, was an exercise in patience. The original was in a Word Perfect document from a computer that I no longer own. Being the tech-tard that I am, I thought if I put the files on a zip drive I could just plug them in and ooh la la there it would be………WRONG!  My Apple computer laughed interanlly I’m sure…….and I even tried to open it a work ……..on my lunch break of course………but the newer version of Word wouldn’t open it either.

Then, to the rescue comes my friend Jeanne. I have worked with Jeanne for sometime, and if you ever need a computer question answered, she is your gal. She was able unlock my Butterfinger Pie recipe from it’s Word Perfect prison. It also unlocked all of my other cherished recipes. I was sooooo happy. Now I am able to share this recipe with all of you, and many more later.

About the pie……..it reminds me of pecan pie. The butterfinger candy adds the crunch like the pecans and of course there is chocolate. Topped with whipped cream, Butterfinger Pie is a rich and gooey dessert, that you will be proud to serve ……..and happy to eat!

Ingredients

  • 2 large eggs
  • 1/4 cup water
  • 1 cup sugar
  • 1/4 cup flour
  • 1/4 teaspoon salt
  • 1/2 cup butter, melted
  • 8 Butterfinger candy bars (2.10z size), coarsely chopped /divided
  • 1 unbaked pie shell ( I buy the pre made but you can make your own)

Instructions

  1. Beat eggs lightly in a large bowl. Mix in water, sugar, flour, and salt until well combined. Stir melted butter into batter. Add 6 of the chopped candy bars. Cool.
  2. Meanwhile pre-heat oven to 325*. Pour filling into pie shell. Bake for 45 minutes or until filling barely set. Cool on wire rack. Cover and refrigerate overnight. Garnish with whipped topping and remaining candy bars.
