You know that panicy feeling when someone stops by unexpectedly during the holidays………you bolt to the kitchen to see what you can pull together in a hillbilly hurry. Well, never fear I got the thing right here……Red Pepper Jam.

I know everyone is aware of a company called Tastefully Simple. They have really great products…….delicious foods and gifts for every day and every occasion. I have, in the past purchased a product called Sweet Pepper Jalapeño Jam, a friend had a party and it was one of the samples and I loved it. They just poured it over cream cheese and served it with crackers and ooh la la appetizer. So, I figured I could make something similar….and I did.

It’s fairly easy to make, the hardest part and it’s not really hard…..more time consuming is the cooking time. It needs to reduce and that takes about 45 minutes. But it has a beautiful upside…….it will keep in the frig for a month…..yes siree……… a whole month!

Make it just before Thanksgiving and it will help you sail right through the holidays for all those moments when you need to fix something in a hurry. 

Keep a package of cream cheese in the frig and when company comes a calling, put the cream cheese on a nice plate, pour over your secret weapon ……..Red Pepper Jam…….and serve with crackers, or my personal favorite…….. pita chips. As you can see, I have a really cute plate that my Elementary staff gave me last year for a Christmas gift………Snowman whose mittens and boots that are little serving spreaders…….it soooo cute! Thank you ladies!!!!

You can also use the Red Pepper Jam as a condiment on sandwiches or burgers, as a glaze for vegetables or meat, or as a dip. It’s sweet and spicy and damn delicious!!!

Ingredients

Scale
  • 2 red bell peppers, finely chopped (about 2 1/2 cups)
  • 128 oz can crushed tomatoes
  • 5 cloves garlic, minced
  • 1/2 yellow onion, finely chopped
  • 1 jalapeño seeded and finely minced
  • 1/4 cup cooking sherry
  • 1/4 cup white balsamic vinegar
  • 1/2 c granulated white sugar
  • 1/2 c brown sugar
  • juice of freshly squeezed lemon
  • 1/81/4 t red pepper flakes
  • 1/8 t kosher salt
  • 1/8 t ground black pepper

Instructions

  1. Place all ingredients in a large deep skillet and bring to a boil. Reduce to an simmer and cook until thick and syrupy (about 45 minutes).
  2. The jam will thicken as it cools. Will keep in the refrigerator for up to 1 month.

 That’s a spicy meatball…….Spicy Chia Chicken Meatball Pasta.
If you have been reading our blog you know this, Tim loves spicy food, and I love to use ground chicken….in any way possible. So, how could I go wrong with these spicy meatballs, well I really couldn’t, and on top of that they are healthy!

Now, healthy does not always mean low calorie, the ingredients in this dish are nutrient dense, so please do not freak out when you see the calories at the end.
In our last post, we talked about the benefits of chia seeds and how we used them in Raspberry Chia Smoothie. So, in this recipe the chia seeds, are mixed with water to make a binder for the meatballs……so no eggs needed. I will admit that the chia water mixture does not look appetizing but it worked great in the meatballs.
Adding rolled oats and coconut oil added to the nutritional value. We all know the benefits of rolled oats as a grain but, I am a huge fan of coconut oil…… Studies have shown that intake of coconut oil can help our bodies mount resistance to both viruses and bacteria that can cause illness. Even more, it also can help to fight off yeast, fungus, and candida.

Coconut oil can also positively affect our hormones for thyroid and blood-sugar control. People who take coconut oil also tend to have improvements in how they handle blood sugar, since coconut can help improve insulin use within the body. Coconut oil can boost thyroid function helping to increase metabolism, energy, and endurance. It increases digestion and helps to absorb fat-soluble vitamins.
Use coconut oil in cooking, as it can stand heat making it a better option. I also use it to remove makeup and as a skin moisturizer. Before anyone curls their lip, thinking I double dip, I have two jars……one for the kitchen and one for the bathroom……….. That was a long lesson.

The meatballs are baked and can be made ahead of time and kept in the refrigerator or freezer until you make the pasta. Keep some in the freezer, so you can whip this up at a moment’s notice. Speaking of the pasta, how easy can boiling pasta, using some of the pasta water and just a small amount of half and half for the sauce be? Even the novice cook can do this to perfection. So, all of you who say “I can’t really cook”, give it a try, the result will amaze you!

A touch of lemon zest, parmesan cheese, and parsley to garnish and you have a beautiful healthy spicy delicious meal. Spicy Chia Chicken Meatball Pasta!

  • 1/4 cup chia seeds
  • 1/2 cup water
  • 1 pound ground chicken
  • 3/4 cup rolled (old-fashioned) oats
  • 1/3 cup green onions minced
  • 1/3 cup plus 1/4 cup grated Parmesan cheese
  • 3 tablespoons coconut oil
  • 1/4 cup finely chopped fresh flat-leaf parsley
  • 1/2 teaspoon dried oregano
  • 2 cloves garlic, minced
  • 1 1/2 teaspoons sea salt
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon red pepper flakes
  • 12 ounces whole grain linguine, spaghetti or angel hair pasta
  • 1/3 cup half-and-half
  • Juice and zest of 1 large lemon
  • 2 tablespoons fresh basil or parsley chopped as garnish.

Instructions

  1. n a small bowl, whisk together the chia seeds and water and let stand for about 20 minutes. (Makes 3/4 cup extra-thick chia gel.)
  2. Preheat the oven to 400°F.
  3. In a large bowl, combine the chia gel, ground chicken, oats, onion, 1/4 cup of the cheese, 2 tablespoons of the coconut oil, the parsley, oregano, garlic, 1 teaspoon of the salt, 1/2 teaspoon of the black pepper, and the red pepper flakes. When evenly combined, firmly form mixture into 20 meatballs (I use an ice cream scoop so they are all equal). Place on parchment lined cookie sheet. Bake in 400* oven for 20-30 minutes until meatballs are totally cooked through. Keep warm in a 175* oven while making the pasta.
  4. Cook the pasta according to package directions. Drain the pasta, reserving 3/4 cup pasta cooking water.
  5. Bring the half-and-half, the remaining 1 tablespoon of coconut oil, and reserved pasta water to a boil over high heat in a large saucepan. Add the drained pasta and toss to combine. Add the lemon juice and toss to combine. Add the remaining 1/3 cup of cheese, 1/2 teaspoon of salt, and 1/2 teaspoon of black pepper and toss to combine.
  6. Transfer the linguine to four large pasta bowls. Top each five of chicken meatballs, sprinkle with basil/parsley and lemon zest, and serve.

The 4th of July weekend brings with it camping, picnics, get togethers, fireworks and food. Speaking of fireworks, how about a firecracker of a burger……. our Cilantro-Sriracha Burgers.

Tim has a taste for the spicy, and Sriracha is one of his favorites. So, why not a burger with Sriracha???………no reason not too. This creation is all Tim……he told me what he wanted in a burger, and I added it in. Now, I must admit I wasn’t too sure about some of the ingredients, they all are strong flavors, but the result was amazing. The burger was spicy to be sure, not only is there Sriracha, but also jalapeño, cumin, onion, coriander, garlic, and cilantro. Now, the spicy was not that breathing fire, oh my God get me a glass of water spicy, it was more a I can breathe a little better now, tingle to your taste buds!

Sriracha Burger

For condiments, an extra layer of spice with some sriracha mayo. You can adjust the spice in the mayo to your taste. I kept mine to the less spicy side, but for those of you who like it hot…..add all you want!

Top the burger with some cool toppings…….lettuce, tomato, onion, and avocado. The avocado was my addition. Tim is not as big a fan of them as I am, but they lent a cool creaminess that I really liked. But as with any burger, add the condiments you enjoy.

So, the next time a spicy burger is in order try the Cilantro-Sriracha Burgers, its fireworks for your tastebuds!

1 pounds ground beef
  • 2 tablespoons cilantro,chopped
  • 1 small jalapeño, minced
  • 1/4 cup minced red onion
  • 2 1/2 teaspoons sriracha
  • 1 clove minced garlic
  • 
1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • 
3/4 teaspoons course salt
  • Freshly ground black pepper
  • 4 slices Pepper jack cheese
  • Hamburger buns
  • Sriracha Mayo:

  • 1/4 cup mayonnaise
1-2 teaspoons sriracha, or to taste
  • Garnish:
  • avocado
,tomato,
lettuce
,onion,

Instructions

  1. Preheat the grill to medium heat. (you can also cook indoors on grill pan or in a skillet)
  2. In a large bowl, combine the beef, cilantro, jalapeño, red onion, sriracha, garlic, cumin, coriander, salt and pepper. Form into 2-4 patties. (we make large burgers)
  3. Make the Sriracha Mayo by combining the mayonnaise and sriracha in a small bowl until combined.
  4. Cook the burgers over medium heat,to desired doneness. Top with pepper jack cheese during last few minutes to melt the cheese. Serve burger on toasted bun with Sriracha mayo, and desired condiments.
