St Patrick’s Day is traditionally a corned beef and beer day! I must turn to the unconventional……..kinda.

Speaking of untraditional, in our community there is a bar/ restaurant called “Kelly’s”
The Kelly family has owned it as long as I can remember. The untraditional part…….they serve Mexican food…awesome Mexican food!

I remember years ago when they first started serving food, they only served on weekends……the line to get in was always long! These days they serve everyday and still have the best Mexican food. If you are ever in Sterling, Illinois, stop by the Irish bar that serves Mexican food, Kelly’s, you will be glad you did.

My Rueben Burritos with Guinness Gravy is in honor of Kelly’s and their blend of Irish-Mexican. Corned beef,swiss cheese, sauerkraut, and thousand island dressing, baked inside a flour tortilla………Rueben Burrito.

In searching for what to do with Guinness beer…….as I have said before neither Tim nor I drink, but I have recipes that call for liquor from time to time. In shopping for the Guinness, all I could find was a case, and I wasn’t sure how much it would take to cook my corned beef, so I needed to find some recipes to use all of it up.

I cooked my corned beef in it ,which used six of them, then there was the Irish Car Bomb Cake, one bottle there……..hmmm.

In my search I saw potatoes with Guinness gravy…….interesting. I found the recipe at What’s Cooking Italian Style , I thought it would be perfect over the burritos…and it was. I would have never thought of using beer as a base for gravy.

Guinness Gravy

It was a nice thick and silky gravy with that Guinness tang. If you drink the beer, you will know the taste. Back when I did partake, I did not like the taste of dark beer. It always tasted slightly burnt, but from what I understand that is how it is suppose to taste. Be that’s as it may, Guinness makes great gravy, and cake.

We devoured two of the burritos right away and saved the others for later. We reheated them in the microwave and dipped them in thousand island dressing. Again they were stellar…….I will be making Rueben Burritos with Guinness Gravy again and again, St Patty’s Day or not!

Rueben Burritos with Guinness Gravy

Ingredients

Scale
  • 1/2 pound Corned beef*, divided in 2 ounce portions
  • 4 flour burrito tortillas
  • 1/2 cup Swiss cheese,divided
  • 1/2 Bavarian sauerkraut ,drained, divided
  • 1/4 cup Thousand island dressing,divided
  • 1 recipe of Guinness Gravy
  • Non-stick spray

Instructions

  1. Preheat oven to 375* warm tortillas in microwave for about 30 seconds to warm. This makes folding easier. On each tortilla place 1/4 of each of the ingredients in the following order; thousand island dressing, corned beef, sauerkraut, swiss cheese. Roll up and place in a baking dish sprayed with non-stick cooking spray( I use coconut oil spray). Cover with tin foil and place in preheat 375* oven for 15 minutes. Remove the foil and return to the oven for another 15 minutes or until the tortillas start to brown.
  2. Place Rueben Burrito on serving dish and ladle on the Guinness Gravy. If you prefer you can use extra thousand island dressing as a dip.
  3. *I cook my corned beef by adding the spice packet that comes with the corned beef and covering the corned beef in my crockpot with Guinness. Cook on low for 8-10 hours.

Guinness Gravy

Ingredients

  • 1 cups beef stock
  • 1/2 cup Guinness beer
  • 1 tablespoons butter
  • 1 cloves minced garlic
  • 1/2 cup onion, minced
  • 2 tablespoons cornstarch mixed with 2 tablespoon cold water

Instructions

  1. Melt butter in the saucepan, add garlic and onions sauté until translucent and soft, about 5 minutes. Add the beer and broth to the saucepan. Simmer for 10 minutes on medium heat. Add the cornstarch mixture stirring constantly. You can add another tablespoon of cornstarch mixed with another tablespoon of water to make the gravy thicker.

  1. Your instructions for the Guinness gravy call to add “ water “, beer, and broth to the sauce pan later adding cornstarch mixture. HOWEVER your recipe doesn’t include water ONLY THE 2 tablespoons for the cornstarch mixture? Please verify or explain.
