I am not Catholic so, I was wondering why fish on Friday for lent? According to mental_floss, Legend has it that, centuries ago, a medieval pope with connections to Europe’s fishing business banned red meat on Fridays to give the industry a boost. That story isn’t true. Sunday school teachers have a more theological answer: Jesus fasted for 40 days and died on a Friday. Catholics honor both occasions by making a small sacrifice: avoiding animal flesh one day out of the week.

So, to those who, for religious reasons, eat fish on Friday…….Spicy Sriracha Crusted Fish Sandwich to spice up a traditional fish sandwich.

I just like fish, any type of fish, but cod is one of my favorites. It has a mild flavor, is dense and flaky. It holds up well in recipes and adapts to any flavor. Like spicy…..

Spicy Sriracha Crusted Fish Sandwich

It’s no secret if you follow us that Tim likes things spicy….really spicy. Sriracha is his ketchup. I also like spicy , just not sriracha as ketchup spicy…lol. Sriracha mixed with Miracle Whip though is the perfect amount of spicy.

Instead of the traditional three dip (flour, egg, breadcrumbs) that bread things such as fish. Miracle Whip, minced with srirachia spread on cod filets, the dipped in panko crumbs, browned in coconut oil, and finished in the oven, made a spicy and perfectly crisped fish sandwich.

Toasted ciabatta bun. Just let me say a word about ciabatta buns….they are the perfect vessel for just about any sandwich. Crispy, chewy on the outside. Soft and spongy on the inside, especially toasted, its perfect! They’re available at most grocery stores.

Now, you have the perfect bun and the perfect crispy spicy fish filet. Now you need the perfect topping. Bring on the cucumber.

Cucumbers can cool the heat of the srirachia and add an additional crunch element.
Ribbons of cucumbers, a little sugar, and rice wine vinegar….super easy. I used a pinch of black sesame seeds…just cause I thought they were pretty.

Assemble time… ciabatta bun bottom, spicy crispy fish, marinated cucumber ribbons, ciabatta top….done and delicious.

Spicy Sriracha Crusted Fish Sandwich

Ingredients

Scale
  • 4 cod filets, boneless and skinless
  • salt and pepper
  • 4 tablespoons Miracle Whip
  • 2 teaspoons sriracha
  • 1 cup panko bread crumbs
  • 1 tablespoon coconut oil
  • 4 ciabatta buns, toasted
  • 1 small english cucumber, cut into ribbons
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon sugar
  • 1/4 teaspoon sea salt
  • Pinch of black sesame seeds if desired

Instructions

  1. Mix cucumber, sugar , salt, and vinegar in a medium bowl. Add sesame seeds if using. Toss to coat and toss occasionally until ready to serve. Set aside.
  2. Preheat oven to 375°F. Spray baking sheet non-stick cooking spray
  3. Place panko crumbs on a paper plate.(easier clean up)
  4. Pat cod filets dry and set aside.
  5. In a small bowl, mix the mayonnaise and sriracha together until well blended.
  6. In an oven proof skillet over medium heat melt coconut oil.
  7. Spread sriracha sauce over both sides of each piece of cod. Place each filet into the panko crumbs pressing lightly to coat.
  8. Place each piece of fish into skillet and fry for 2-3 minutes, or until golden brown and crunchy. Turn each piece carefully. Place skillet in preheated oven and bake for 10-20 minutes, depending on the thickness of the filet, until opaque all the way through and easily flaked with a fork.
  9. To serve, place one cod filet on each of the bottom of toasted ciabatta buns. Top with cucumber mixture, and place bun top over cucumbers to form a sandwich.
