Inspiration comes in many forms. Sometimes all it takes is a new product on the grocery store shelf and BAM…… it’s a great idea. Mini Crab Rangoon Tostadas !

Who doesn’t like Crab Rangoon??? Surprise it is not really Oriental ….boo! According to Wikipedia ……Crab Rangoon has been on the menu of the “Polynesian-style” restaurant Trader Vic’s in San Francisco since at least 1956. Although the appetizer is allegedly derived from an authentic Burmese recipe,the dish was probably invented in the United States. A “Rangoon crab a la Jack” was mentioned as a dish at a Hawaiian-style party in 1952, but without further detail, and so may or may not be the same thing.

Though the history of Crab Rangoon is unclear, cream cheese, like other cheese, is essentially nonexistent in Southeast Asian and Chinese cuisine, so it is unlikely that the dish is actually of east or southeast Asian origin. In North America, crab Rangoon is often served with soy sauce, plum sauce, duck sauce, sweet and sour sauce, or mustard for dipping.

Who really cares about it’s origin…….it’s just delicious!

So, how did I make the stretch to Mini Crab Rangoon Tostadas??? I was at the grocery store and saw these mini flour tortillas. They called them Street Tacos. Fluffier, and mini, and yes….super cute. When I bought them, I had no plan in mind. My purchase was based solely on cuteness!

One of the rebates recently was for imitation crab meat. I know, I know, but for some odd reason I like it, and real crab meat is not always available at my local grocery store and can be expensive.

Purchasing the $2.50 package of crab with my .75 cent rebate I only paid $1.75 for the package, which made six mini tostadas…ya gotta love that! Plus, I had a rebate for cream cheese…bonus!

Anyway, since I had my new cute tortillas and my rebated crab, what was I to do???  Make Mini Crab Rangoon Tostadas of course. To say this was an easy recipe is an understatement. In under 30 minutes…look out Rachael Ray……I had these little gems D-O-N-E!

Mini Crab Rangoon Tostadas

Spray the tortillas with a little coconut oil, and fry until crisp. Mix the cream cheese filling, heat up the crab, and a quick dipping sauce and you have a taste to rival the restaurant/take out version.

Tim and I had them as a light supper, but they would be perfect as appetizers, a quick snack, or something to toss together for those las minute drop by friends.

Mini Crab Rangoon Tostadas

Ingredients

Scale
  • 6 Mini (street taco) flour tortillas
  • Crab Topping
  • 1 8 ounce package imitation crab meat (you can also use real crab)
  • 1 teaspoon avocado oil
  • Cream Cheese Filling
  • 4 ounces cream cheese, at room temperature
  • 1 green onion
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon lemon juice
  • Dipping Sauce
  • 2 heaping tablespoons orange marmalade
  • 1 tablespoon soy sauce
  • 1 tablespoon rice wine vinegar
  • ½ tablespoon lemon juice
  • Extra chopped green onion for garnish

Instructions

  1. Tostada Shells
  2. Spray 6 mini flour tortillas (Mission has a mini street taco) with non stick cooking spray ( I use coconut oil) and heat on a griddle or skillet over medium high heat until browned and crispy, and they hold their shape (flat)
  3. Crab Filling
  4. Heat the avocado oil in a pan over medium-high heat then add the crab meat. Cook until just beginning to brown about 5 minutes. Remove from pan and set aside.
  5. Cream Cheese Filling
  6. Combine cream cheese, green onion, Worcestershire sauce soy sauce and lemon juice, whisk until light and fluffy.
  7. Dipping Sauce
  8. Combine all ingredients in s small bowl stirring to combined. If sauce seems thin add more marmalade.
  9. Assemble the Crab Rangoon Tostada
  10. Spread the cream cheese mixture on the prepared tostada shells taco shells. Top with crab, then drizzle with dipping sauce. Sprinkle with extra green onion.

Notes

You may get 8 depending on how much topping you put on each tostada.
