So, writing a food blog is a dream come true for Tim and I, but with your life focused on food, it’s hard to keep your weight in check. I mean really hard …….like 30 pounds in no time flat hard!

Taking control of that is my new mission. Besides, when you get of a certain age…….you realize that being healthy is so important…..should have started a decade ago….ugh!!

No sense in beating yourself up over it, a change needed to be made. I took the plunge and joined Weight Watchers. That’s right I’m a point counter.

I joined online, as I really don’t have the time to go to meetings and truth be told, I’m not much of a joiner. It’s inexpensive, and with the app on my phone, and all the online tools, following the plan pretty easy.

Spicy Shrimp Cauliflower Fried Rice

After 17 days I am happy to say I have lost over 6 pounds. Now I know you are thinking, that’s not a great loss, but slow and steady wins the race. I didn’t put it on overnight, so I’m pretty sure it won’t come off that way either. Although I wish it would!

Not being deprived or feeling like I can’t have that Starbucks, or whatever carb I crave, is a big plus for me. I love pasta, and well the new Hazelnut Mocha Coconut Milk Macchiato….my new Starbucks fav….. are not off the menu for me. I just count the points, and while my newest Starbucks obsession is 11 points, if I share it with Tim…it’s only 5…ish.

All of my rambling leads to the Spicy Shrimp Cauliflower Fried Rice recipe. It’s 1 point…….yea thats right……1 point !!! Does it taste like diet food? Not even a little bit!!!

Filling, and with the cauliflower, you really will not even know there is no rice. Speaking as a rice lover, that’s saying  something. Cauliflower is a great carb-less way to have carbs….or make yourself think you are. It lends itself too so many flavors.

Smart Points has a ton….over 200 “free” foods, so for me creating recipes using those free points is, well it’s a no brainer.

Shrimp spiced with garlic, ginger, and red pepper flakes……always spicy for Tim, the shrimp is stir fried with the rice cauliflower, and a veggie blend I buy at Wal Mart called Super Blend.

Easy is always something I look for because I know with busy lives we do not have time for elaborate meals. Buying the cauliflower already riced and the veggies in a blend get you in and out of the kitchen in a flash.

Spicy Shrimp Cauliflower Fried Rice

Most grocery stores, or big box stores, will have some version of both the cauliflower and the Super Blend. I prefer fresh from the produce department, but you can buy the riced cauliflower frozen. Alternatively, you can also buy a head of cauliflower and rice it yourself in the food processor. Chunk up the cauliflower, place it in the food processor and pulse until it looks like rice…..easy.

Super Blend is a mix of napa cabbage, Brussels sprouts, kohlrabi, broccoli, carrots, and kale. All super stuff, all zero points, and all delicious in this stir fry.

Spicy Shrimp Cauliflower Fried Rice

Ingredients

112 ounce package fresh or frozen shrimp, peeled and deveined
1/2 teaspoon sesame oil
1 teaspoon avocado oil
1 tablespoon fresh grated ginger
4 cloves garlic, minced
1/2 teaspoon red pepper flakes
1/2 teaspoon salt
2 eggs, lightly beaten
1 tablespoon avocado oil, divided
110 ounce package Super Blend veggie mix (found in the produce section)
11 pound package riced cauliflower (found in the produce section)
1/3 cup green onion
2 tablespoons fresh cilantro, chopped for garnish
Lime Wedges


Instructions

Thaw shrimp, if frozen.

In a medium bowl mix thawed shrimp with sesame and avocado oil, ginger, garlic, salt and red pepper flakes. Set aside.

Heat 1 teaspoon avocado oil in a extra-large skillet or wok over medium heat. Add eggs and cook, without stirring, until set, turning once. Remove and chop cooked egg. Set aside.

In the skillet or wok, heat olive oil over medium-high heat. Add the shrimp mixture and stir fry until shrimp are opaque. Remove shrimp from skillet or wok and set aside.

Add add 1 teaspoon avocado oil to pan and cook the Super Blend for about 2 minutes just until veggies start to soften.

Add the cauliflower along with the remaining teaspoon of oil; cook and stir 4-5 minutes or until cauliflower starts to soften and begins turning brown.

Add the cooked shrimp, egg, and green just until the mixture is hot.

Garnish shrimp mixture with cilantro. Serve with lime wedges.


Notes

Super Blend contains: Brussels sprouts, kohlrabi, broccoli, carrots, and kale.
