Ingredients

Scale

2 1/2 cups all-purpose flour

2 tablespoons sugar

1 1/2 tablespoons baking powder

1/2 teaspoon salt

1 cup buttermilk

1 large egg, beaten

1/4 cup melted butter

3/4 cup shredded sharp cheddar cheese

3/4 cup Mexican blend cheese

2 jalapeno peppers, seeds removed and 1 diced and 1 sliced

Instructions

Preheat oven to 375 degrees.

Spray a 9×5 loaf pan with non-stick spray and set aside.

Over a large bowl, sift together the flour, sugar, baking powder, and the salt.

Making a well in the center, pour in the buttermilk, beaten egg, and melted butter.

Stir until just-combined with the dry ingredients. Gently fold in the cheese and the diced jalapeño.

Transfer mixture to prepared loaf pan and spread into an even layer.

Top loaf with sliced jalapeños and extra cheese.

Bake the bread for 50-60 minutes or until a toothpick inserted comes out clean.

Let cool for 10 minutes before removing from pan.

Remove loaf from pan and place on cooling rack for at least 30 minutes before slicing.

Serve warm.
