4 ears sweet corn cut from cob
3 tablespoons Miracle Whip
2 green onions, sliced
1/2 teaspoon red pepper flakes
Juice and zest from 1 lime
1/2 cup crumbled cojita cheese
1 tablespoon cilantro, chopped
salt and pepper to taste
Preheat oven to 350°.
In a large bowl, mix together all ingredients.
Pour into a baking dish sprayed with nonstick cooking spray.
Bake uncovered for 20 – 30 minutes until mixture is bubbling and hot.
Garnish with extra cheese and cilantro if desired.
