2 cups diced tomatoes
1 cup white onion, finely diced
1 jalapeno pepper, seeded and deveined (use 2 if you like it hot)
1/4 cup cilantro, chopped, plus more for garnish
Juice of 1 lime
1 teaspoon apple cider vinegar
1 clove garlic minced
1/8 teaspoon salt and pepper
Place all ingredients into a medium-size bowl and mix well.
Let sit for about 15 minutes to meld flavors.
Serve with chips or as a topping for your favorite Mexican food dishes.
Makes approximately 3 cups.
