Ingredients
Instant Pot Farro
1 cup pearled farro
2 cups water or stock
seasonings of your choice
Roasted Mushroom Asparagus
8 ounces large portobello mushroom caps, sliced
8 ounces baby Bella mushrooms, quartered
1 bunch fresh asparagus (8 ounces)
3 cloves thinly sliced garlic
6 thyme sprigs
1/4 teaspoon red pepper flakes
1/4 cup avocado oil
1/2 teaspoon garlic pepper
1/2 teaspoon salt
Instructions
Instant Pot Farro
Add 2 cups of water/stock, rinsed farro, and seasonings.
Close the lid and turn the vent knob to seal
Press manual and adjust the time to 10 minutes(use instruction for your Instant Pot)
When done cooking, natural pressure release for 5 minutes, then quick release.
Drain any remaining liquid.
Eat as is or use in your favorite recipe.
Roasted Mushroom Asparagus
Place racks in bottom third and middle of oven; preheat to 350°F.
Toss mushrooms, garlic, thyme, red pepper flakes, avocado oil, 1/2 teaspoon garlic pepper and 1/2 teaspoon salt on a rimmed baking sheet. Roast on the bottom rack, tossing halfway through, until deeply golden brown and caramelized, 25–30 minutes.
Arrange mushrooms and asparagus around cooked farro in a serving bowl. Garnish with extra thyme if desired.
