Ingredients

  • 1 1/2 cups fresh pineapple, chopped
  • 1/2 cup red bell pepper, seeded and chopped
  • 1/2 small red onion, chopped
  • 1/2 jalapeño, seeded, deveined, and chopped
  • 1/4 cup loosely packed cilantro, finely chopped
  • 1 tablespoon lemon juice
  • 1/4 teaspoon garlic pepper
  • 1/4 teaspoon ground cumin
  • salt and pepper to taste

Instructions

  1. Toss pineapple, red bell pepper, red onion, jalapeno, cilantro, lime juice, ginger, cumin and salt and pepper to taste in a medium bowl. Can be served immediately or chill.
