Cinnamon Roll Pancakes-Brown Sugar Bacon

Kinda like breakfast…..kinda like dessert!


Ingredients

Scale
  • Bacon
  • 6 slices Applewood Smoked Bacon – thick cut
  • 1/4 cup brown sugar
  • Pancakes
  • 1 1/2 cups flour
  • 3 heaping teaspoons sugar
  • 1 teaspoon balking powder
  • 3/4 teaspoon baking soda
  • 1 egg
  • 4 tablespoons butter, melted
  • 1 1/3 cup buttermilk
  • Pinch of salt
  • Cinnamon Swirl
  • 1/2 cup butter melted
  • 3/4 cup brown sugar, packed
  • 1 tablespoon cinnamon

Instructions

  1. For Bacon:
  2. Preheat oven to 350*
  3. Line a baking sheet with foil. Arrange bacon on foil line sheet and sprinkle with brown sugar. Bake for 20 minutes, turning bacon once during cooking time. Remove from oven and let cool completely. Then roughy chop an set aside.
  4. For Pancakes:
  5. Combine all dry ingredients in a large bowl. Whisk to blend all ingredients.
  6. Mix all wet ingredients in another bowl until well combined.
  7. Add wet ingredients to dry and mix until well combined. If you have a few lumps its ok.
  8. For Cinnamon Swirl:
  9. Mix all ingredients and pour into a ziploc or pastry bag. This mixture will be liquidy.
  10. To Make Pancakes:
  11. Heat a small amount of butter or use nonstick spray in a skillet or griddle over medium heat until hot. Drop 1/4 cups of pancake batter onto hot pan. Using cinnamon swirl mixture in bag(cut a small corner of the bag) squeeze a spiral onto the top of the pancake. Be careful to not get to close to the outside edge of pancake. Cook until bubbles appear on the surface. Flip the pancake over and cook an additional 1 to 2 minute.
  12. Stack pancakes and top with reserved bacon and your favorite syrup.

Notes

Prep and cook time does not include cooking the bacon.
