Potato Skin Pizza

  • 1 ready made pizza crust, like Boboli
  • 2 large unpeeled potatoes, baked and cooled
  • 2 tablespoon butter
  • 1 clove garlic, minced
  • 1/41/2 teaspoon Italian seasoning
  • 1 cup sour cream
  • 6 pieces applewood smoked bacon strips, cubed and cooked
  • 5 green onions, chopped
  • 1 cups shredded Italian Blend cheese
  • 1cup shredded cheddar cheese


  1. Slice potatoes into 1/4-1/2 inch slices.
  2. Melt butter, garlic and Italian seasoning. Brush mixture over potatoes potatoes.
  3. Spread sour cream over pizza crust; top with sliced potatoes.
  4. Sprinkle with bacon, onions and cheeses.
  5. Bake at 400° for 15-20 minutes or until cheese is lightly browned.
  6. Let stand for 5 minutes before cutting.
