2 cups cooked rice
1 large avocado, diced
1/4 cup cilantro, chopped
Zest and juice from 1 lime
Salt to taste
Mix the avocado, cilantro, and lime juice and zest into the rice before seasoning with salt to taste. Rice can be either hot or cold.
Replace the rice with brown rice or cauliflower rice if desired.
