We are almost to the recipe I have been building up to for the past few posts. Quick Easy Avocado Rice is the final recipe to create the elusive amazing recipe you won’t want to miss.
This one is just as the recipe implies…quick and easy!
Since finding out that I have gluten intolerance*, rice has become my best friend. Typically I make a big batch over the weekend to use all week. Having something ready to add other dishes or to add something to and make a side dish is a time-saving practice.

When making the super secret recipe, I needed rice. I also had some ready avocados. And we all know that when an avocado is ready, you can’t wait. If you turn your back, it will be overripe. Plus, avocados are a great addition to most Mexican dishes.
Having the pre-cooked rice already, I heated it in the microwave. You can make this dish either cold or warm, but I needed it warmed up for this recipe.
Cilantro, as I have mentioned in the past, is either a love-it or hate-it herb. Personally, I love it, but if it’s not your thing, leave it out.
The lime and salt, however, do not leave out. Citrusy acid and salt are the perfect seasonings, and the lime juice helps preserve the avocado’s color. Nothing worse than a brown avocado.
A quick mix, and that’s how easy it is to have the perfect Quick Easy Avocado Rice.

Side note: you can use brown rice or cauliflower rice as a substitute for regular rice.Print
2 cups cooked rice
1 large avocado, diced
1/4 cup cilantro, chopped
Zest and juice from 1 lime
Salt to taste
Mix the avocado, cilantro, and lime juice and zest into the rice before seasoning with salt to taste. Rice can be either hot or cold.
Replace the rice with brown rice or cauliflower rice if desired.
