I think I have mentioned before that I love Chinese food….Tim, not so much, but he really liked this recipe. So much that I have made it several times.

This recipe has allowed us to have a nice dinner in a flash.

I am a huge fan of ground chicken. We have tons of recipes on the site that use it, so what one more?

Browned ground chicken with soy, hoisin, orange juice and zest, garlic, ginger, and red pepper flakes for spice comes together in a hurry.

Toss in rice noodles….I love rice noodles for several reasons. One, they are gluten-free, which has turned out to be essential for me. And two, they are super easy to prepare. Just boil water put the noodles in, and walk away. They are ready in about 8 minutes without watching over them like you have to with regular noodles.

Mix the noodles with the sauce and sprinkle with green onions.

Ingredients

Scale

1 pound ground chicken
1 teaspoon avocado oil
1/3 cup soy sauce
1/3 cup hoisin sauce
1/3 cup beef broth
1/3 cup orange juice
Zest from 1 orange
1/4 cup brown sugar
1 teaspoon fresh ginger, grated
2 cloves of minced garlic
1/4 teaspoon red pepper flakes
1 teaspoon cornstarch mixed with 1 teaspoon water
14-ounce box of rice noodles
Chopped green onion to garnish


Instructions

Cook rice noodles according to package instructions.

In a large skillet, heat avocado and brown the ground chicken in the oil.

Add soy sauce, hoisin sauce, beef broth, orange juice, brown sugar, ginger, garlic, and red pepper flakes. Add cornstarch mixture and cook until beginning to thicken.

Drain noodles, add to skillet and toss to coat.

Garnish with chopped green onion if desired.
