Sometimes I get a little crazy when I buy things. I overbuy….just ask Tim! Such was the case with cranberries, pistachios, and oranges.
I know I have mentioned the Wal Mart grocery app and pick up ad nauseam, but it really is excellent! Except that I sometimes do not choose the correct packaging, hence my overabundance.
Christmas cookies are it right now, and the colors alone of these cookies make them Santa worthy. To say nothing of the flavor!
Plus, they are super easy to make. Two dozen beautiful cookies in about 30 minutes.
The combo of orange, cranberry, and pistachio, as I said, is perfect. Citrusy, slightly crunchy from the pistachios, and sweet from the cranberries.
A simple glaze of powdered sugar, orange juice, orange zest, and vanilla tops the Cranberry Orange Pistachio Cookies off. Fancy them up with extra pistachios, cranberries, and zest for a wonderful Christmas (or anytime) cookie.

Ingredients
Cookies
1/2 cup butter room temperature
3/4 cup light brown sugar
1 large egg
1/2 teaspoon vanilla paste
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Zest of 1 orange
1 1/2 cups oatmeal (not instant)
1/4 cup orange juice
3/4 cup dried cranberries, chopped
1/4 cup pistachios, chopped
Glaze
1 cup powdered sugar
1/2 teaspoon grated orange peel
1/4 teaspoon vanilla paste
2 tablespoons orange juice
Instructions
Cookies
Preheat oven to 350 degrees. Line baking sheets with parchment paper and set aside.
In a large bowl, beat together butter, egg, and brown sugar until creamy.
Add vanilla, orange juice, and orange peel beat to combine.
Add flour, baking powder, cinnamon, and nutmeg beating just until combined.
Stir in oats, pistachios, and cranberries.
Scoop dough with an ice cream scoop (this makes perfectly even cookies) and place on prepared baking sheets.
Bake for 12 to 14 minutes.
Cookies will be set but may still look slightly raw. Remove from oven and cool on baking sheet for 5 minutes. Transfer to wire cooling rack.
Orange Glaze
- Whisk together powdered sugar, orange peel, orange juice, and vanilla in a small bowl.
- Drizzle icing over cooled cookies.
Garnish with extra chopped pistachios, cranberries, and orange peel if desired.
