Now that it’s summer we like it hot, hot, hot!! Ok, Tim likes it spicy all the time, Spicy Chicken Meatball Rice Noodle Bowl is just the ticket for him!!

I have, over time, come to like spicy food. Not too spicy but a gentle heat. Sriracha has become my favorite, Tim favors Sweet Baby Rays…it’s all about preference.

Anyway, I love Asian cooking. Tim …not so much, but he did say this recipe was excellent, the perfect amount of spice.

While I know ground turkey is a great go-to substitute for ground beef, sadly, I am not a fan. I think it’s the smell. As a matter of fact, we had a package in the freezer, and Tim just cooked it up for our little Wilma (fur baby…a.k.a. Blog Dog)she loved it!!! Any recipe that calls for ground turkey I sub with ground chicken. Side note Wilma likes that too! She’s not spoiled ….much!!!

Spicy Chicken Meatball Bowl

One skillet and you have a delicious bowl meal that really doesn’t take to much effort.

Any meatball recipe is pretty straightforward: ground meat, egg, panko or breadcrumbs, and seasonings. This recipe is no exception. Just mix and shape into meatballs. I use an ice cream scoop to get uniform meatballs.
About 6-8 minutes, and they are cooked to perfection.

For the first time, we grew snow peas in our garden. While the snow peas in this recipe are not ours, they were not quite ready yet. I do have a salad recipe using snow peas coming soon. Snow peas are an Asian recipe mainstay, and I have always cooked them whole. After one of the recipes from our Martha and Marley Spoon deliveries, I am now slicing them. Snow peas are crunchy, quick to cook and give any dish a vibrant green color.

Now on to the spicy sauce. Asian food needs garlic, ginger, soy sauce, and for us, something spicy. But if you have spicy, you need a bit of sweet, honey was perfect. Not only did the honey add a touch of sweetness, but it gave a sticky texture that the sauce that let it cling to everything.

Bowls may be passé, but I still enjoy them, and as an old lady, it is my prerogative to live slightly in the past…lol. Seriously passé or not, this recipe is the perfect Asian bowl meal.

Brown rice noodles are super easy to fix (only boiling involved) and create an excellent bowl base. Top the rice noodles, with the sticky, spicy meatballs, and top with stir-fried snow peas. Garnish with green onions and pass the extra sauce.

Spicy Chicken Meatball Rice Noodle Bowl

Ingredients

Meatballs

1 pound ground chicken

1/2 cup panko crumbs

1 egg

1 clove garlic minced

1/2 teaspoon salt

1/4 teaspoon freshly ground pepper

2 tablespoons avocado oil

Vegetables

1 cup snow peas, sliced lengthwise

Sauce

1 tablespoon avocado oil

1 tablespoon fresh ginger minced

1 clove garlic minced

1 tablespoon Sriracha sauce

1/4 cup soy sauce

1/4 cup rice vinegar

1/4 cup honey

8 ounces brown rice noodles

2 green onions thinly sliced for garnish


Instructions

Meatballs

In a large bowl, combine the ground chicken, panko, egg, garlic, salt, and pepper. 

Using an ice cream scoop, scoop meat mixture into a ball and put it on a large plate. The size of your scop will determine the number of meatballs.

In a large skillet, heat 2 tablespoons of oil over medium-high heat. Cook meatballs until browned on all sides and cooked through; 6-8 minutes. Remove meatballs from pan to a clean bowl or plate and set aside.

Vegetables and Sauce

Using the meatball skillet over medium-high, add 1/2 tablespoon of oil and stir fry the snow peas until tender-crisp (about 3-4 minutes). Remove to the plate with the meatballs.

Reduce heat to medium add a 1/2 tablespoon more oil, the ginger and garlic and cook until fragrant, about 1 minute. Stir in the sriracha sauce, soy sauce, honey, and rice vinegar. Bring to a boil and lower the heat to a simmer. Cook for 5-8 minutes until slightly thickened. 

Noodles

While the sauce is cooking, prepare rice noodles according to package directions. 

Add the meatballs back to the pan, stirring to coat with sauce. Serve the meatballs and vegetables on top of the rice noodles. Drizzle with extra sauce and sprinkle with green onions.
