Before the plague came to visit, I made a really great, super easy meal that will satisfy your entire family. Honey Chicken Green Bean Stir Fry.

So, when you work at a school, you expect to get the occasional bug….its the nature of the beast. Well, the supernova of flu has wreaked havoc …..it’s flu-ma-gedon!!!!! I literally have been in bed sick for over a week. And this wasn’t just your run of the mill flu……this carried all maladies that the flu can bring…..use your imagination.

Today is the first day I have crawled out of bed for more than a trip to the bathroom. I’m taking that as a good sign. I was beginning to think I was never going to get better, but I think I’ve turned a corner.

Right now, food is about the last thing I am interested in, but I realized how long it was since I posted a recipe….yikes!!! Here we go….

Ground chicken for some reason years ago became my go-to ground meat. I still love a juicy burger, but there is something about ground chicken that makes my taste buds perk!

A few weeks ago, we shared our Buffalo Chicken Stuffed Celery Sticks. A great appetizer with all the flavors of buffalo chicken. Tim discovered that he thinks the ground chicken mixture from that recipe is a great salad add on, and he has mixed it into several other dished as well.

Since Tim and I have opted for better eating, trying to change up recipes to still be full of flavor yet stay within the path we have chosen can be a challenge. A few weeks ago, our local Aldi’s had the most beautiful french green beans. I bought some and roasted then alongside salmon, it was delicious. So I bought more, and the result was Honey Chicken Green Bean Stir Fry.

This dish is so easy to make is easily a one-pot meal, kid-friendly, and leftovers reheat for a great lunch.

Saute the green bean with red onion, garlic, ginger add to cooked ground chicken, and top with a spicy, sweet sauce. Serve over a rice quinoa mixture, and you have a healthy one-pot meal.

Honey Chicken Green Bean Stir Fry

Ingredients

Scale

3 tablespoons avocado oil
1/2 pound green beans, cut into 2-inch
1 medium red onion, chopped
4 cloves garlic, chopped
1 tablespoon finely chopped ginger
1 pound ground chicken
2 tablespoons soy sauce
2 tablespoons purchased sweet chili sauce
2 tablespoons rice wine vinegar
2 tablespoons honey
1/4 teaspoon red pepper flakes
1 package Minute Rice – Rice Quinoa Blend prepared according to package directions
Sliced green onion for garnish


Instructions

In a small bowl, combine soy sauce, sweet chili sauce, vinegar, honey, and red pepper flakes and set aside.

In a wok or large skillet over medium-high heat, heat 1 -2 tablespoons oil. Add green beans and stir fry until just turning tender-crisp. Add the red onion garlic, and ginger continue to stir fry until onions are just translucent.
Remove mixture to a large bowl and set aside.
In the same wok or skillet, over medium-high heat, add remaining tablespoon oil and ground chicken. Saute chicken until cooked through.
Add the sauce to cooked ground chicken and bring to a boil.
Add green bean mixture and toss to combine coating the beans with the sauce.
To serve, place the prepared rice mixture into bowls and top with chicken green bean mixture. Alternately add the rice mixture to the wok/skillet and stir to combine, serve directly from wok/skillet.
Garnish with green onions if desired.
