Buffalo Chicken Stuffed Celery Sticks

It seems like we were just talking about the Holidays. Now here it is Super Bowl time!! Buffalo Chicken Stuffed Celery Sticks combine the best of Buffalo Chicken ingredients in an easy to eat a stuffed stick.

Buffalo wings are a football party mainstay. With a side of celery sticks, bleu cheese, and ranch. Why not put all those flavors into one easy to eat bite…no reason I can think of!!!!

Ground chicken is one of my favorite recipe ingredients, it just lends itself to whatever you want to create.

Super Bowl parties seem to get bigger and bigger every year, especially if your team is in the bowl! Snacks are a must-have, but you don’t want to spend all of your time in the kitchen preparing food.

This recipe can be made in advance and assembled just before game time. Don’t make the stuffed celery too far in advance, or the celery will wilt.

Brown, the ground chicken, then add a spicy hot sauce with just a tablespoon of cream cheese to give the meat a creamy texture. We used Sweet Baby Rays hot sauce, but Franks will work the same.

The recipe calls for a bunch of celery, but truth be told, I bought a bag of sticks that were already cut and ready to go. I just cut them in half as they were a bit longer than I wanted.

When browning the meat, be sure you break it up as you cook, so it has a fine texture. If you don’t, you won’t be able to get it stuffed into the celery.

I did trim off the backside of some of the sticks, so they sat flat. They may lie on their side if you don’t. Then all of the toppings will slide off your sticks.

Speaking of toppings, nothing could be easier than some crumbled blue cheese and a drizzle of ranch. Both are necessary for a real buffalo wing.

Description

Buffalo chicken celery sticks are loaded with spicy ground chicken topped with crumbled blue cheese, then covered in ranch dressing for the perfect Super Bowl or party snack!


Ingredients

Scale

1/4 cup hot sauce ( I used Sweet Baby Rays)
1/4 cup butter
1 tablespoon white vinegar
1/8 teaspoon Worcestershire sauce
1/8 tsp cayenne pepper
1 clove garlic minced
Pinch of salt
1 tablespoon cream cheese
1 pound ground chicken
1 bunch celery cut into 23 inch long pieces
Garnish with crumbled blue cheese and drizzle with ranch dressing.


Instructions

In a small saucepan over medium heat combine hot sauce, butter, vinegar, Worcestershire, cayenne, garlic, and salt.
Bring ingredients to a boil, whisking constantly. Once the sauce is boiling, turn off the heat and add cream cheese. Whisk until combined.
In a large skillet brown ground chicken until no longer pink. Make sure to as you cook the chicken to keep breaking the meat up, so there are no large chunks
Pour prepared sauce over ground chicken and stir to cover.
Fill each celery stick with buffalo chicken.
Top with crumbled blue cheese and drizzle with ranch dressing.
Garnish with chopped parsley if desired.


Notes

The recipe can be served warm or chilled.
If serving these chilled, do not make more than a few hours ahead. If made to far in advance, the celery will wilt.
