It was an experiment gone, right!!! 

Somehow I ordered 2 containers of strawberries on a recent Instacart order. I really needed a way to use them?????

It’s supposed to be Spring here in Northern Illinois, but you couldn’t prove it by the weather. We’ve had a few good days, but it not been a sunny warm Spring. In fact, as I sit here writing this on Mother’s Day, it is really kinda ugly outside. Windy, rainy….yuck!!

On top of the yucky weather, we are still Sheltering in place. I’ve mentioned before that I am a serious homebody. But going out and having to wear a mask, stay 6 feet away from others (that really is hard to do) is starting to get old.

So we cook and bake and EAT!!!! We also need some comfort. Strawberry Crumble Crisp is total comfort!!

Red juicy strawberries, mixed with a bit of balsamic vinegar and brown sugar……I know what you are thinking, but there is something about the balsamic that adds a special touch. When we make shortcake, I mix the berries with balsamic and brown sugar and let it masterate before serving, it’s soooo good!!

Just a touch of flour to the berries, brown sugar, and balsamic makes a perfect base for what the real star of the show is, the topping. 

Crisp toppings are really the reason to eat crisp in the first place. The fruit lends a nice touch, but it’s all about the topping! Flour, oats (be sure to use old fashioned oats, not instant)a touch of sugar and vanilla infused with butter. Crumbly, crunchy, delicious!!!!

Strawberry Crumble Crisp

Ingredients

Scale

6 cups strawberries, hulled and quartered
1 tablespoon balsamic vinegar
2 tablespoons flour
1 tablespoon light brown sugar

Topping
2/3– cup flour
2/3– cup old fashioned rolled oats (not instant)
2 tablespoons light brown sugar
1 teaspoon baking powder
1 teaspoon vanilla paste
1/2 teaspoon salt
6 tablespoons cold unsalted butter, cut into pieces


Instructions

Preheat oven to 375F.
Spray an 8 by 8-inch baking dish with non-stick cooking spray.
Place strawberries in a large bowl and toss with balsamic vinegar.
In a small mixing bowl, whisk together flour and 1 tablespoon light brown sugar until incorporated.
Add the brown sugar mixture to the strawberries and gently toss to coat. Pour berry mixture into the prepared baking dish and set aside.

Topping
In a medium bowl, whisk together flour, oats, brown sugar, baking powder, vanilla, and salt.
Using your fingers, mix cold butter into the flour/oat mixture until the mixture resembles coarse crumbs.

Sprinkle mixture over strawberries in baking dish.
Bake for 30 to 35 minutes, or until the top is golden brown and fruit is bubbling.
Remove from oven and allow to cool slightly.
Serve warm or cold with whipped topping.
