Notice I said almost. I love sweets, whether for dessert or a snack. These cookies fit both.
Easy to mix together and chill in no time, they can be ready in around 30 minutes.
My KitchenAid is one of my prized kitchen appliances. I don’t even know how long I’ve had it, but it has been lovingly used for a long, long time. A stand mixer makes cakes and cookies so easy to prepare. If you have the means, I highly suggest one.

Ingredients
2 1/2 cups flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, room temperature
2 tablespoons plain greek yogurt
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 teaspoon vanilla paste (an extract is fine as well)
Zest of 4 limes
2 cups white chocolate chips
1/2 cup pistachios, chopped
Glaze
1 cup powdered sugar
Juice and zest of 1 lime
Extra pistachios and lime zest for garnish
Instructions
Preheat oven to 375 degrees. In a stand mixer or with a handheld mixer cream together butter brown and white sugar until light and fluffy.
Add in the egg, vanilla, and yogurt and mix well.
In a medium bowl, whisk together flour, baking soda, lime zest, and salt. Slowly add the dry mixture to the creamed mixture. Mixing until all dry ingredients are incorporated.
Stir in the white chocolate chips and pistachios.
Scoop the dough onto baking sheets lined with parchment paper using a small ice cream scoop.
Bake cookies in preheated oven for about 10 minutes or until beginning to brown.
Remove from oven and allow to cool completely before removing from tray.
Combine the powdered sugar, lime juice, and zest mixing until smooth. Add more lime juice to achieve the desired consistency.
Frost cooled cookies and garnish with extra pistachios and lime zest if desired.
