This time of year cooking a great big meal isn’t my thing. Summer is for snacking. Chicken Parmesan Dip is a meal turned into a dip.

Imagine a hot dip with all the flavor of Chicken Parm. Chicken, marinara, and lots of cheese.

I ran across an old recipe when cleaning out files awhile back and it sounded interesting. See, pre-internet, I had a very, very, extensive collection of recipes. Tons and tons of pages ripped from magazines, handwritten, and untold numbers of those little recipe books that are at the checkout lane in the grocery store.

Once the internet came along, I spent hours typing those recipes into my computer. As things move fast in the cyber world, the original program I used for my recipes became obsolete, and I lost a lot of my recipes. My friend Jeannie was able to help me retrieve some of them…..thank you, Jeannie!!

This recipe was in those retrieved. Well, it’s not precisely that recipe….I had to change a few things…of course!! Please note that I do not know who the original recipe came from. I was not concerned about that in my pre-blog days…sorry!

The original recipe used shredded chicken. Ground chicken still has that excellent chicken flavor but is much easier to dip, so I swapped it up.

Chicken Parmesan Dip

Using marinara instead of spaghetti sauce gave a better dip texture. I found spaghetti sauce was a bit runny.

Typically ricotta is not part of chicken parm, but for a dip, it’s smooth, slightly sweet taste was perfect.

And of course, you need cheese mozzarella and hence the name parmesan cheese.

Chicken Parmesan Dip comes together quickly and could be assembled in advance then popped into the oven when you are ready.

When I find new things at the grocery store, I am usually over the moon about them. Mini Naan is no exception. They are the cutest little buggers. Perfect size for dipping. I found them at my local WalMart in the deli section.

For this recipe, I placed the mini naan on a cookie sheet and sprayed them with cooking spray, then sprinkle on dry Italian seasoning. Into a 400 degree oven until the naan was just turning golden brown.

NonAlcohol wines are an excellent alternative for those who do not indulge.

Chicken Parmesan Dip

Ingredients

Scale

1/2 pound ground chicken, cooked
3/4 cup ricotta cheese
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/4 cup parmesan cheese, grated
1 cup marinara sauce
1 cup mozzarella
1 tablespoon each fresh basil and parsley, chopped for garnish
Mini Naan for dipping


Instructions

Preheat oven to 350 degrees.
In a medium bowl combine ricotta, garlic powder, Italian seasoning, and parmesan cheese.
In an 8-inch baking dish, spread the ricotta mixture evenly on the bottom. Top with the marinara sauce, chicken, and mozzarella cheese.
Place in oven and bake for 20 minutes. Broil for an additional 2 minutes to help crisp up the top.
Sprinkle with fresh herbs.
Serve with toasted mini naan.
