Spring really has to be just around the corner…right??? Fresh fruit, fresh veggie, come on Mother Nature work with us! Even if Mother Nature doesn’t play nice, we can still bring in the fresh.

With Mother’s Day right around the corner, we need pretty fresh, new ideas for our Mother’s Day Brunch or lunch.

Fresh fruit has never been more appealing, and when served with a delicious dip you have yourself a winner. The kids will even eat it. Honey Vanilla Bean Fruit Dip is my take on that traditional cream cheese fluff recipe. The addition of honey and vanilla bean paste give the old new life.

If you do not have vanilla bean paste, you can use vanilla extract or a vanilla bean. I like the paste for the ease of use while still getting those little vanilla bean seeds that lend a little something extra to the dip.

Please note that in cutting your fruit fries you will waste fruit. Just cut up all the extra bits and pieces and make fruit salad…problem solved.

Ingredients

Scale

1/2 cantaloupe, seeded, rind removed
1/2 honeydew melon, seeded, rind removed
1 pineapple, peeled and cored
1/2 baby seedless watermelon, rind removed

Honey Vanilla Bean Fruit Dip
4 ounces cream cheese softened
4 ounces marshmallow fluff
1 tablespoon honey
1 teaspoon vanilla bean paste ( vanilla extract or vanilla bean can be substituted)


Instructions

In a small bowl with a hand mixer on medium-high speed whip all dip ingredients until smooth and fluffy.

For the fruit using a ridged cutter, cut fruit into french fry length pieces. Make sure to cut all side to give your fries that crinkle cut look.

Place in a serving dish and serve with the Honey Vanilla Bean Fruit Dip.
