Auntie Anne’s Pretzels: Copycat Recipe

Today was another freezing *#&%$#@ cold day. To cold for school. I must say that the beauty of working for a school, besides winter break, spring break, summers off, and a smattering of long weekends, is the occasional surprise day off. You know for a snow storm, or as was the case today a wind chill that would freeze you to the spot in a few seconds. Well yeah ……… I got to cook all day……..or should I say bake……..soft, chewy, warm buttery pretzels………sorry I lost my train of thought. Having the oven on all day……..I made a few other things…..stay tuned…….. took the chill off the house quite nicely.

Now I know we all have stories about these kinds of pretzels. The first was I ever had was at a mall. Tim and I visit Vegas frequently………….it is our favorite place in the world…….so far. We really aren’t world travelers…….we leave the world traveling to Tim’s identical twin brother Tom who currently resides in the Philippines. The last time we were in Vegas we had pretzels after a show……..Brad Garrett’s Comedy Club………if you are in Vegas do yourself a favor and visit the comedy club…………. the comedy and the pretzels were great! Now this is a really quick go with recipe. Coconut Cilantro Lime Rice.I made this recipe to go with the Date Night Dinner recipe Spicy Honey Chicken. When having a spicy meal it’s always nice to have something creamy as a balance.

Description

Creamy Rice Side Dish


Ingredients

Scale
  • 1 teaspoon olive oil
  • 1 can 13.5 0z Lite Coconut Milk
  • 2/3 cup brown jasmine rice
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1 clove garlic minced
  • 2 tablespoons cilantro
  • 1/4 cup sliced green onions

Instructions

  1. Rinse rice. Set aside. Place coconut milk, salt and oil in a 2 qt. saucepan and bring to a boil. Add rinsed rice and stir. Cover and reduce heat to simmer. Simmer 25 -30 minutes or until rice is cooked and liquid is absorbed. You may need to add 1/4 to 1/3 cup of water if the liquid is absorbed before the rice is cooked.Stir in garlic, cilantro and green onions. Serve

Notes

You can use regular rice instead of brown.

I have started using coconut milk when making rice instead of water when I want to have that rich creamy texture.
