Shrimp Scampi Pizza

If you are looking for a unique pizza, Shrimp Scampi Pizza is it!!

Shrimp Scampi Pizza

Valentines Day is just around the corner, and of course, romantic recipes are all over the internet. Shrimp Scampi pops up a lot. So that got me to thinking…..I know dangerous right!!

Tim and I are not real big on large romantic gestures but we do enjoy a nice meal, and we LOVE PIZZA!!!!!! A combination of two yummy things, how could you go wrong. Let’s just say you can’t.

Shrimp Scampi Pizza

I looked for Shrimp Scampi Pizza on Pinterest, and while they all looked good, they were all missing the pasta. You can’t have Shrimp Scampi with pasta; it’s unheard of!

We added it, and I don’t wanna brag or anything, but it was a stroke of genius. Shrimp is the star of the show, but the pasta was hardly second fiddle. I think they were co-stars.
Juicy, succulent shrimp, with white wine, garlic, shallot, butter sauce, tossed with angel hair pasta, super yummy. But put all of that on a crispy pizza crust…..delicious!!!

Instant Pot Lasagna Soup

Instant Pot Lasagna Soup should have a really long title to describe accurately precisely what they are, but alas to be SEO friendly it was not to be. This recipe should be called Instant Pot Lasagna Soup in Crispy Garlic Bread Bowls. A mouthful I know, and in more ways than one.

Instant Pot Lasagna Soup

Keeping with the Instant Pot theme since I know many of you received one as a gift this past holiday season, I wanted to create a recipe that was homey and comforting for the dreary days of winter.

Having never made pasta in the Instant Pot before I did a bit of research as I’m sure there was a trick to it…there was. It takes three times as long for the Instant Pot to come to pressure as it does for the pasta actually to cook. The pasta cooks in only four minutes, but it takes about 15 minutes for the pressure to build.

Instant Pots make one-pot meals super easy. Mine has a sear feature that lets me brown the meat and onions, then without dirtying another pot transition to cooking the rest of the dish.

Pacific Rim Chicken Meatballs

In the spirit of the upcoming Super Bowl, I present to you… Pacific Rim Chicken Meatballs. A new recipe has been a long time coming, and this one is worth the wait.

Pacific Rim Chicken Meatballs

It seems like forever since I have been in my kitchen or behind my camera. Let’s say that the Holiday season was not so jolly at our house. Sinus infection, stomach flu (Christmas Day), abscessed tooth, root canal. UGH!!

But, it’s a New Year, and I’m back to doing what I love, creating recipes and photos for the blog. While I was recovering from all that ailed me, I was able to do some research. It seems that 2019 will be the year for Pacific Rim food. Researching trends is a part of keeping things fresh in my world. Continue reading “Pacific Rim Chicken Meatballs”
