Corned Beef Hash
As we are nearing St Patty’s Day, I’m working on a great recipe for us……..but mostly you. As is inevitable, we had leftover corned beef.
What to do with left over corned beef? Look on Pinterest, of course. Much to my surprise Corned Beef Hash came up…….. a lot!
I guess I never realized that this was not only popular, but a breakfast thing…..who knew……..well I guess everyone but me! Continue reading “Corned Beef Hash”
Cast Iron Spaghetti Meatball Pizza
Even more than the age old question…..What the “Forks” for Dinner? is What the “Fork ” to do with leftovers??????
We always seem to have leftovers that after about a week, need to take a trip to the trash. This is where I really have to watch my husband…….Tim has no sense of smell, so he can’t tell when something’s time has passed. I really hate to throw things out, but we are only two people, and you can only eat a recipe so many times before…….ugh! Even if it was the best thing you ever ate.
I can never make the correct amount of spaghetti……..I always make wayyyyyyyyy too much. So, in an effort to use the leftovers, I racked my brain……what, what, what can I do with with this glob of leftover spaghetti. I know……but really with all the starch…..then it gets cold……..it’s a big glob. I remembered the Italian Spaghetti Meatball Burger we made back in September…….the one that uses the spaghetti as the bun. Why not use the spaghetti as the crust for a pizza?????

The meal was prefect, you spent the days with family and friends…….everyone is gone, the dishes are done……….what are you going to do with all those leftovers????
Make a pizza……thats right……a Thanksgiving Pizza! Everything that makes Thanksgiving special, on a pizza…..say what????? No its true!
So, this is more of a method than a recipe. Heres what I did:
Gravy for the sauce. Spread leftover gravy over a purchased or homemade pizza crust.
Then top with leftover mashed potatoes.
Dressing and Turkey go next.
Cranberry sauce….as much or little as you like.
In the oven for 15-20 minutes.
And …….OMG its Thanksgiving……… on a pizza! It was the best thing I have ever done with left overs. You know how when you make some thing, and you take a taste and you are speechless …….this is like that. Tim and I both just kept saying…..omg this is soon good!!!
So take all those leftovers, toss them on a pizza crust and prepared to relive Turkey Day again!!!!
NOTE: You can add any leftovers you want. If you like sweet potatoes, or have leftover veggies…….just toss on what you like best.
