One of our first recipes on What the “Forks” for Dinner? was Hamburger Soup. It has been one of our most popular recipes and it is Tim and I’s personal favorite.

Hamburger Soup

Ingredients

Scale
  • 1 1/2 pounds ground beef
  • 1 onion, minced
  • 4 carrots, diced
  • 3 celery ribs, thinly sliced
  • 1/2 cup barley
  • 1 (28 ounce) can diced tomatoes
  • 6 cups beef stock
  • 1 heaping tablespoon beef base (paste type)
  • 3/4 cup ketchup
  • 1 bay leaf
  • 1 tablespoon parsley
  • 1 teaspoon garlic pepper
  • 1/2 teaspoon dried thyme

Instructions

  1. Heat a large soup pot over medium-high heat, and crumble in the ground beef. Cook and stir until the beef is evenly browned and no longer pink about 10 minutes.
  2. Stir in the onion, carrots, celery, and barley. Pour in diced tomatoes, beef stock, and ketchup. Season with bay leaf, parsley, garlic pepper, thyme, and bring to a boil. Reduce heat, and cover; simmer for 2 hours, stirring frequently. Remove bay leaf before serving.

As we are nearing St Patty’s Day, I’m working on a great recipe for us……..but mostly you. As is inevitable, we had leftover corned beef.

What to do with left over corned beef? Look on Pinterest, of course. Much to my surprise Corned Beef Hash came up…….. a lot!

After we posted the Poor Mans Lobster Recipe………..which I know you all will be making for Valentines Day, our conversation was still about the food we served at Waldo Stubbs.  It was such a large part of people’s lives, not only the place, but the food. Several readers ask if we had the recipe for Hamburger Soup, which was served every Wednesday along with a Grilled Cheese Sandwich. It was the most popular soup at the restaurant.

Well, we did not have the original recipe, but after much brain-storming, we think we have recreated the recipe. For those of you who remember the soup try it and let us know if we succeeded.
