Lobster Mac and Cheese

So, another Valentines Day has come and gone………We had a very lovely dinner of Lobster Mac and Cheese. I had been wanting to make this dish ever since I saw Ina Garten make it on the Barefoot Contessa on the Food Network several years back.

Confession time………..1. I am a total Food Network Junkie. I have been hooked on it from day one……2. I want to be the Barefoot Contessa. There is something about Ina Garten and her show that inspires me each and every time I watch it.

I wanted to make something special for Tim for Valentines dinner. Our local supermarket had lobster on sale, and we both love mac & cheese……..sooooo an idea was born! Lobster Mac and Cheese!

Now, when I say we love mac & cheese you must realize that what I am really speaking of is, of course………the boxed velveta & shells…………I know, I know, processed, out of the box……..but even us recipe creating, chefy, food bloggers sometimes just need a day off. Nothing fancy, easy, and lets be honest it really tastes good!!!!!!

But this was not the time for that, and I could not mix real lobster into boxed mac & cheese. So it had to be made from scratch.I tweaked the recipe I found on Food Network and I must say, the result almost put the velveta to shame…….OK it did!!! Continue reading “Lobster Mac and Cheese”

After we posted the Poor Mans Lobster Recipe………..which I know you all will be making for Valentines Day, our conversation was still about the food we served at Waldo Stubbs.  It was such a large part of people’s lives, not only the place, but the food. Several readers ask if we had the recipe for Hamburger Soup, which was served every Wednesday along with a Grilled Cheese Sandwich. It was the most popular soup at the restaurant.

Well, we did not have the original recipe, but after much brain-storming, we think we have recreated the recipe. For those of you who remember the soup try it and let us know if we succeeded. If you have noooooo idea what we are talking about, just try it and you’ll know what all the fuss is/was about! Continue reading “Hamburger Soup”

So……… as promised a special meal and story for Valentines Day!

Once upon a time……….isn’t that how all great fairy tales start? When Tim and I first met some 30 odd years ago, we were both in our early twenties and it was the late 70’s. I remember going to a party with a girlfriend and when we arrived I saw the cutest guy in cut off short and tube socks with red stripes……….you really do have to be from that era to understand how totally hot that look was! Fast forward a few years and we both were working for the hottest restaurant – bar- nightclub in the area. Anyone who is of a …….certain age……cough, cough  and from this area remembers Waldo Stubbs. It had that Cheers atmosphere…..where everybody knows your name……..The place was always hopping and especially on Friday nights for all you can eat “Poor Mans Lobster”. It was iconic…….more on the food later. Continue reading “Poor Mans Lobster”
