Hamburger Soup

One of our first recipes on What the “Forks” for Dinner? was Hamburger Soup. It has been one of our most popular recipes and it is Tim and I’s personal favorite.

Hamburger Soup

Ingredients

Scale
  • 1 1/2 pounds ground beef
  • 1 onion, minced
  • 4 carrots, diced
  • 3 celery ribs, thinly sliced
  • 1/2 cup barley
  • 1 (28 ounce) can diced tomatoes
  • 6 cups beef stock
  • 1 heaping tablespoon beef base (paste type)
  • 3/4 cup ketchup
  • 1 bay leaf
  • 1 tablespoon parsley
  • 1 teaspoon garlic pepper
  • 1/2 teaspoon dried thyme

Instructions

  1. Heat a large soup pot over medium-high heat, and crumble in the ground beef. Cook and stir until the beef is evenly browned and no longer pink about 10 minutes.
  2. Stir in the onion, carrots, celery, and barley. Pour in diced tomatoes, beef stock, and ketchup. Season with bay leaf, parsley, garlic pepper, thyme, and bring to a boil. Reduce heat, and cover; simmer for 2 hours, stirring frequently. Remove bay leaf before serving.

Fresh Roasted Tomato Soup

This past week a touch of fall has been in the air. Cool breezes with temperatures in the 70’s during the day and 50’s……best sleeping weather….at night.

Fall is my favorite time of year. I love the changing of the leaves and those cool crisp days. But, it’s also the end of the summer garden season…boo! Tomatoes are one of the last hanger on’ers in a garden. So, cool temps, fall, SOUP!

Chicken Sausage Orzo Soup

So, even though its almost Memorial Day the weather here in Northern Illinois is not acting like a preview to summer…….rainy, chilly….rainy, chilly….repeat.

When its rainy and chilly, I like a nice bowl of soup. Soup in my mind is either a hard and fast recipe or throw it in the pot and hope………Chicken Sausage Orzo Soup was the latter.
