Cilantro-Sriracha Burgers

Cilantro Sriracha Burger

The 4th of July weekend brings with it camping, picnics, get togethers, fireworks and food. Speaking of fireworks, how about a firecracker of a burger……. our Cilantro-Sriracha Burgers.

Tim has a taste for the spicy, and Sriracha is one of his favorites. So, why not a burger with Sriracha???………no reason not too. This creation is all Tim……he told me what he wanted in a burger, and I added it in. Now, I must admit I wasn’t too sure about some of the ingredients, they all are strong flavors, but the result was amazing. The burger was spicy to be sure, not only is there Sriracha, but also jalapeño, cumin, onion, coriander, garlic, and cilantro. Now, the spicy was not that breathing fire, oh my God get me a glass of water spicy, it was more a I can breathe a little better now, tingle to your taste buds!

Sriracha Burger

For condiments, an extra layer of spice with some sriracha mayo. You can adjust the spice in the mayo to your taste. I kept mine to the less spicy side, but for those of you who like it hot…..add all you want!

Top the burger with some cool toppings…….lettuce, tomato, onion, and avocado. The avocado was my addition. Tim is not as big a fan of them as I am, but they lent a cool creaminess that I really liked. But as with any burger, add the condiments you enjoy.

So, the next time a spicy burger is in order try the Cilantro-Sriracha Burgers, its fireworks for your tastebuds!

Teriyaki Burger with Pineapple Mango Salsa

Teriyaki Burger with Pineapple Mango Salsa

Teriyaki Burger

Burgers, burgers, burgers,…………Teriyaki Burger with Pineapple Mango Salsa.

Now that the weather is warm, I have two things on my mind……Salads and burgers. It is all we have eaten recently. Ok, we have had the obligatory pizza……several times.

We still have to get our grill up and running……….just lazy we are! But, we have a grill pan so……….sorta the same? Ok, not really, but these burgers were really great even without the aid of the outdoor grill.

My conception for these really came from pineapples and mangos being on sale at the store, and they were beauties. If cutting the pineapple and mango is not your thing, you can use canned or frozen, but it really is perfect with the fresh.

So, since I wanted to make a burger, and pineapple goes with an Asian flare, that was my direction. I added green onions, garlic, ginger, soy and a touch of red pepper flakes for heat to the beef. Now, I have made these twice, first time with ground beef, and the second time with ground chicken. Both were equally yummy, so what ever your taste is, go with that. A turn on the grill, and the burgers were done.

Teriyaki Burger Chicken

For the salsa……the pineapple and mangos were mixed with avocado, red pepper, onion, jalapeño, cilantro and a squeeze of lime. Then mixed all together and set it aside.

When I think of burgers, I always think of ketchup and mustard, but not with these and we do like something on a burger. The sauce was simple with the aid of my trusty imitation Bullet. We bought a cheap version, just to be sure, we would use it and liked it before we shelled out the cost for the real deal. Well, the cheapo has worked really well, so why spend over a hundred when you can spend twenty?

I just put all the ingredients for the sauce……fresh pineapple, soy, ginger, garlic, rice wine vinegar, and a touch of sesame oil. Gave it a whirl in my handy, dandy, cheapo Bullet and I had a sauce…….well almost. I heated it to a boil and added a cornstarch mixture to thicken.

Lightly toasted Kings Hawaiian Buns were perfect for this burger. The burger, the sauce, and the salsa……..oh la la…….oh wait thats French………well anyway there were a tasty, tasty burger.

Cumin Beef Kabobs

Cumin Beef Kabobs

Cumin Beef Kabobs

It’s time to grill!!!!

Once Memorial day has passed, it is summer time………..pools open, flowers and gardens are blooming, and you can wear white pants.

Although we do not eat a lot of beef, occasionally Tim and I like a nice steak, or in this case some Cumin Beef Kabobs.

Ease of preparation in the summer is key to enjoying said summer…………Marinading makes any cut of beef extra tasty, and there is something about marinading in soy that makes beef taste extra delicious. Add Tim’s favorite spice……next to red pepper flakes…….cumin, and the marinade is easy and makes the beef tender and juicy, even if you use an less expensive cut of meat.

When making kabobs I have one piece of advice, make sure everything on the kabob has approxamately the same cooking time. If you try veggies that have a short cooking time, they will either burn or in they will fall completely off the skewer by the time your meat is done. Although they do make kabob baskets that holds everything inside,I have not been able to find them this year 🙁 ……….But they are a nifty device, if you can find them. I must admit I really haven’t looked that hard. Besides I found this really cute kabob set at the local Goodwill store that I had been dying to try…………..I love the way it looks.

Cumin Beef Kabobs 1

For these kabobs I wanted to use tomatoes, but as I said above they would have just fallen off the skewer by the time the meat and onions were ready. So I just sautéd them on the side with a bit of sea salt and finished them with a snip of chives. Which by the way, my chives are beautiful this year……….more on the garden as it grows.

So, when you are looking for a easy but delicious kabob recipe, try these Cumin Beef Kabobs with a side of sautéd cherry tomatoes and enjoy some summer grilling!
