Quick Crispy Dijon Pork Chops

Most days the last thing many of you want to do is worry about dinner, or worry about how you can get dinner on the table quickly. Thin cut meat is the answer to those who are short on time. They cook in virtually minutes no matter the application.

Quick Crispy Dijon Pork Chops

Having a crispy coating on meat or fish is a must in my book. To get that crispy exterior usually means a dipping station…..flour, eggs, and breadcrumbs. Who has time for all that, and the mess….ugh!

Quick Crispy Dijon Pork Chops

On a whim, I tried spreading mustard on some thin cut chops and then dipped them in seasoned panko breadcrumbs. They fried up perfectly. And in record time. It took all of 6 minutes. The side dishes took longer!

Quick Crispy Dijon Pork Chops

The beauty of this dish is it can be used on chicken or fish also. Be sure to use very thin cut meats or the panko will burn before the meat is done.

Quick Crispy Dijon Prok Chops are your new go-to dinner when you are short on time, but still, want a scrumptious meal that your whole family will love.

Instant Pot Asiago Shrimp Risotto

Halloween Mummy Cookie Balls

Halloween is next week, and everyone needs to make a special treat to celebrate “All Hallows’ Eve.” Halloween Mummy Cookie Balls are a super quick and easy treat for all your little monsters.

Mummy Cookie Balls

The folks at Baker’s have these new cookie ball kits that are the bomb!! Cookie Ball Kits by BAKER’S Premium Chocolate create deliciously indulgent cookie balls in just 10 minutes without ever turning your oven on!

Mummy Cookie Balls

Each kit includes pre-measured cookie crumbs, sprinkles and a bar of BAKER’S Semi-Sweet Chocolate. There are several to chose from, and each has a unique taste and style. I have made two of the flavors and both are terrific!

Simply add cream cheese to cookie crumbs, roll into bite-sized balls, dip in melted chocolate. Each kit also comes with sprinkles, but I saved those for another day.

I chose the white chocolate kit because……well Mummys are white. I did need to have extra melted white chocolate for the drizzle as the kit has just enough to coat the cookie balls. Plus of course googly eyes, no Mummy is complete without them!

Mummy Cookie Balls

Mummy’s are easy to decorate since there is no rhyme or reason to their raggedy outfits.

Make the cookie balls according to the package directions. Melt extra white chocolate to make the Mummy rags.  No fancy equipment is needed, just a plastic bag with a corner snipped off.

Drizzle the coated cookie balls with the melted chocolate and place the googly eyes on top and you have Halloween Mummy Cookie Balls!Mummy Cookie Balls

Quick, easy and super cute!! Happy Halloween!
