Whipped Toffee Dip and Apples is a spin on a snack we serve at school.
For those of you new to the blog, my daytime job is that of Food Service Director for the Oregon School District. We have 3 schools, Oregon Elementary, D.L.R. Jr. High and Oregon High School.

If you listen to the news at all you know that a great deal of publicity has surrounded the National School Lunch Program in recent years. Our schools participate in the the program, but last year due to extremely strict rules regarding ala carte sales to High school students, our district decided to break ties with the program at the High School level.

Our belief is that students at the High School level should be able to make informed choices for themselves. We support our student by offering healthy, well planned meals and snacks with out the stringent rules. The rules would have eliminated one of our most popular items.

At school we just call it apples with dip. The students love it! I happen to eat the apples with dip everyday at school along with the salad bar.
We offer the equivalent of one apple and serve it with a small container of dip. The dip at school is not the recipe I am doing today, but similar.

So, I was thinking of how I could make this easy and quick, while jazzing it up some. Using whipped cream cheese, eliminates the need to let cream cheese come to room temp and makes is super easy to blend. Adding powdered sugar, and brown sugar ( brown sugar gives a light molasses taste), a touch of vanilla, a quick whip with the cream cheese……it’s light fluffy and sweet. But it needed a little bit of ……as I am fond of saying……. somethin’ somethin’.

Tim and I love the flavor of those brickle toffee bits you can buy in the baking aisle at the store. Hint: they are great on anything caramel, ice cream , and butterscotch pudding….our fav.

I had some left so, I mixed them in the dip. Sometimes don’t you wish you could pat your self on the back…..lol. The bits were the somethin’ somethin’. They added a sweet toffee crunch….perfect for sweet juicy apples.

Please use sweet apples, like gala, or fuji……they are the perfect dippers. I think graham crackers would make a great dipper too!
