Cast Iron Cod Potatoes and Onions
What can you make in a big fat hurry……..fish! Cast Iron Cod Potatoes and Onions.
In past posts I have mentioned that I had a ton of recipes that I thought were lost forever…….then my friend Jeanne, recovered them….she is awesome!!! This recipe is one of them.
I have had a hankering for fish lately ………. on the last grocery shopping trip I picked some up. Just some frozen fillets….nothing fancy. If the store had fresh I would have bought them but they didn’t. Anyway frozen lasts for a long time right?
Recently we seem to purchase food, and then ……stuff happens……a week later I see the (fill in the blank) that I bought, and ponder… how long it has been in my frig???? My motto…..when in doubt, throw it out!!! We sometimes throw out a lot of food…..not good!
Funny, I bought the fish frozen, so if we got distracted it would not be a problem……I used it the next day……go figure. Continue reading “Cast Iron Cod Potatoes and Onions”
Cast Iron Spaghetti Meatball Pizza
Even more than the age old question…..What the “Forks” for Dinner? is What the “Fork ” to do with leftovers??????
We always seem to have leftovers that after about a week, need to take a trip to the trash. This is where I really have to watch my husband…….Tim has no sense of smell, so he can’t tell when something’s time has passed. I really hate to throw things out, but we are only two people, and you can only eat a recipe so many times before…….ugh! Even if it was the best thing you ever ate.
I can never make the correct amount of spaghetti……..I always make wayyyyyyyyy too much. So, in an effort to use the leftovers, I racked my brain……what, what, what can I do with with this glob of leftover spaghetti. I know……but really with all the starch…..then it gets cold……..it’s a big glob. I remembered the Italian Spaghetti Meatball Burger we made back in September…….the one that uses the spaghetti as the bun. Why not use the spaghetti as the crust for a pizza?????

Merlot Mushroom Filet
It’s the last big deal of the holidays………New Years Eve!!!!
In New Years Eve’s past, Tim and I have always worked. When you are in the restaurant business, New Years Eve is a big deal………for customers! For those of us who work on New Years Eve, we call it amateur night. Those who only come out on New Years Eve and celebrate a bit to much!… if you know what I mean!
This year, we get to celebrate at home…….woot woot!!!! For any special occasion I always think of a steak……..for me, nothing beats a filet mignon. It’s tender and juicy (if cooked right)…….but, it is rather pricy…….ok, it’s really expensive, but you don’t eat it everyday, so on the eve of a new year we splurge.
Truth be told, we got a gift card from Omaha Steaks, so ours were free, well, not free……..when you go to their site, and see all the great offers…….lets just say, we went over the amount on our gift card. We were not disappointed in the purchase, the steaks were/are great!
