So, one more week to go for the big day. In case you have been living under a rock you know I mean the Super Bowl!! As I have said earlier I am not a huge sports fan, but how can you not have a little excitement over the biggest game day of the year. Folks wait all year for the game, the commercials, and of course the food!!! People plan for their Super Bowl parties all year. Burgers, nachos, snacks of all kinds and of course…….Meatballs. I happen to think meatballs are the cornerstone of any party because who in the world does not like them! You can use any kind of ground meat, and flavor it in so many different way. My recent post of Chicken Enchilada Meatballs has been one of my most popular recipes to date. You may want to add them as part of your game day feast. Well if you are a Football fan……..I am not………shhhh…don’t tell anyone. But Tim…….all I can say is if it’s about sports he’s about it. I don’t know about sports, but I do know what to serve to those who are…….Chicken Enchilada Meatballs of course. I mean it really is the best of two things that I love, Mexican food and Meatballs. Happy New Year!!
So…….it’s snowing……..again. Well I guess that’s winter in the midwest and I have no where to be….oh that magic feeling ( Beatles reference ).
When I started this venture I didn’t realize how obsessed I would be…….I want it to be perfect (type A girl). And there is soooooo much to learn. So as I move forward I hope you will all stick with me as I venture forward in 2014. So one of my co-workers ask for an onion dip recipe that I have been making and reworking for years. I love sweet onions and the addition of swiss cheese….well need I say more. This recipe is easy to resize for a crowd although my version is just enough for two.So I hope this is the recipe you wanted me to post Mindy……..enjoy!
