Summer in the midwest is unpredictable at best. This summer has been pretty decent so far…….and then….holy crap its hot!!!!!!! When it’s hot, the last thing I want is to heat up the kitchen, or eat anything hot….ugh! Asparagus Farro Feta Salad is a cool delicious salad…. when its too hot to cook.
Tim and I had to give up our beloved asparagus patch when we moved, but we still enjoy asparagus as much as ever. With summer heat ramping up I really don’t feel like cooking….I barely feel like eating, although I do manage…LOL

I have developed some new fav foods over the summer. Especially farro!
Farro has a high protein and fiber content and a nutty, chewy texture (similar to barley) that makes it great for grain salads, soups, stuffings, and pilafs. Buy pearled farro, it makes the cooking process so much easier. Having a rice or pressure cooker is nice too…..cuts back on cooking time.
So……… could you fry farro up like fried rice? I tried it with great results, but what about just frying/toasting it like breadcrumbs????? Nutty, chewy, and crispy!!!! I could use it to sprinkle on a salad. How about I make a salad for you?? Continue reading “Cheese Ball Basil Salad”
I’m feeling hot, hot, hot ( you’re singing right now aren’t you?)……….I knew it was too good to be true that we would be spared super hot and humid days….a girl can dream. It’s 88 degrees and fells like 102 ……yucky!
When it’s hot, a salad seems like just the ticket. Now if it wasn’t for air conditioning, I would not have made this particular salad, as it does require oven usage. But, thank goodness we have such a luxury. Continue reading “Farro Cauliflower Bacon Salad”
