This is a multi – faceted story……first off, Tim and I love salmon. Loaded with omega-3s , low in calories, and pairs with so many other ingredients the recipes possibilities are endless.

In Tim’s line of work, he talks to lots of folks everyday. At one of his accounts called  Breakers Saloon & Eatery, he has become friends with the owner Victor. Victor and his wife Jan have ran this popular saloon and eatery for many years. As a food blogger, keeping on trend has become a regular search for me on Google…whats trending in food today?… Gotta keep current! Plus, it get me to expand my horizons…..and apparently my waistline.….lol

Healthy grains are on trend these days. I must confess that I have never really eaten many of the avant-garde grains. No particular reason, just never have. Recently we were at a restaurant and I had a steak that was served on a bed of grains with spinach, tomatoes, and mushrooms. I was not impressed with the meal per say, but the grains were wonderful, chewy and creamy, and al dente……I wondered what they would be like in a really good dish.

Chicken Sausage Orzo Soup

So, even though its almost Memorial Day the weather here in Northern Illinois is not acting like a preview to summer…….rainy, chilly….rainy, chilly….repeat.

When its rainy and chilly, I like a nice bowl of soup. Soup in my mind is either a hard and fast recipe or throw it in the pot and hope………Chicken Sausage Orzo Soup was the latter.
