St Patrick’s Day is traditionally a corned beef and beer day! I must turn to the unconventional……..kinda.

Speaking of untraditional, in our community there is a bar/ restaurant called “Kelly’s”
The Kelly family has owned it as long as I can remember. The untraditional part…….they serve Mexican food…awesome Mexican food!

I remember years ago when they first started serving food, they only served on weekends……the line to get in was always long! These days they serve everyday and still have the best Mexican food. Chicken Cordon Bleu Meatloaf

Nothing says comfort food like meatloaf. We all grew up with it. For some it was a certain night of the week………Monday Night Meatloaf……..for us it was always the same, meatloaf, au gratin potatoes ( Betty Crocker from the box) and corn. My brother and I were not huge veggie eaters as kids. But, give us corn and we would eat every kernel.

I have made different versions of meatloaf my entire adult life. Some super simple, some with waaayyy to many steps and pre cooking. I have tried using ground turkey, of which, if you follow our blog you know I am not a big fan of. On the other hand, I am a fan of ground chicken. My favorite way to make meatloaf is just hamburger, egg, ketchup, onion, and oatmeal……cover it with ketchup and slices of bacon………it reminds me of home. Continue reading “Chicken Cordon Bleu Loaf”

Savory Stuffed French Toast Taco

A friend of Tim and I owns a restaurant, Mom’s Diner. It’s open for breakfast and lunch, and a dream come true for our friend. A few weeks ago we went for breakfast. Tim loves skillets,you know the breakfast with everything. I on the other hand, go for the sweet stuff…….and my fav is french toast. Once we perused  the menu, I decided on Mom’s french toast. Thick cut french toast covered in crushed corn flakes……it was awesome.

I kept thinking about it and I wanted to try it at home. Then, as often happen with me, my mind starts whirling with possibilities………what if I used a different cereal?…….what if i stuffed it?……..how would something savory taste?……..maybe still a touch of sweet.

So, off to my source of constant inspiration …….the grocery store. Once again I have to say. I love to grocery shop!!!!! I could stay there for hours!  Continue reading “Savory Stuffed French Toast Taco”
