The holidays are fast approaching and it seems there is never enough time to get everything done. Now is the time to pull out the crock pot or pressure cooker and put it to good use. Italian Beef – two ways………

A couple of weeks ago Tim mentioned Italian Beef………he wanted to make a pizza…….Italian Beef and Pepper Pizza. The Italian Beef being the star of the show……….. we wanted it to be perfect.

I have made my Italian Beef the same way for years! Super easy and totally delicious. Tim on the other had wanted to make a jazzed up version……..you know Mr. Spicy. So, we made both…….they were both delicious, but of course I though mine was a smig better and he thought the same about his………so let’s call it a tie. I will share both recipes with you and you be the judge!

Using either recipe you can, make the pizza, which we will also post the recipe for, or sandwiches, use it to top pasta or rice. Make it into nachos for game day. Whatever you do with it will be awesome.

Back to the Holiday madness……. this would be perfect for a Christmas or New Years Eve buffet…….it holds in the crock pot beautifully.

Throw it in the crock pot before that last minute shopping and when you get home with your goodies ………dinner is ready……….and no one will say What the “Forks” for Dinner?

Italian Beef

Ingredients

Scale
  • 2 pounds beef chuck roast
  • 1 medium onion, sliced
  • 3 garlic cloves, minced
  • 10 pepperoncinis (mild or hot)
  • 1/4 cup of juice from pepperoncinis jar
  • 2 tablespoons coconut oil
  • 1/2 cup red wine
  • 1/4 cup Worcestershire sauce
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon dried Italian seasoning
  • 1/41/2 teaspoon crushed red pepper
  • 1 cup beef broth

Instructions

  1. Place the beef roast at the bottom of the crockpot. Place all other ingredients on top of the roast. Cover the crock pot and set on high for 4-6 hours, or on low from 8-10 hours.
  2. Once the beef is tender and falling apart, use two fork to shred the meat in the juices.
  3. Serve warm on toasted rolls, on a pizza in nachos or with rice or pasta, or on it’s own.

Notes

This recipe can be cooked in a crockpot or a pressure cooker. Times in the recipe are for a crockpot. If using a pressure cooker adjust times according to your pressure cooker instructions. Mine take 70 minutes.

Ingredients

Scale
  • 34 lb Roast
  • 2 Packets of Zesty Italian Dressing Mix (dry mix)
  • 1 cup red wine
  • 1 12 oz jar of sliced Pepperocini and juice
  • 1 cup of beef broth

Instructions

  1. Place all ingredients into crock pot and cook on low 8-10 hours or on high 4-6 hours. Shred the meat using two forks. Use in sandwiches, pizza, nachos, or on pasta or rice.

Sweet and Spicy Chili

Chili ………congers up images of winter, football, and Sunday!

I was going to stun you with my incredible chili knowledge…….you know the history of chili……..yada…..yada……yada. Well, it seems there is quite a controversy as to the origins of chili so, if you are really all that interested, you will have to google it. By the time I wrote all of it down and you read it ……..holy moly.

So, instead, I will amaze you with this Sweet and Spicy Chili. First, let me say that chili is Tim’s thing. There are a few items in the food world that for some reason are beyond my scope…….for reasons unknown………chili is one of them.

As we were planning our next recipe Tim suggested chili. I tried to steer the planning anywhere but there, but he kept coming back to it. The next words out of his mouth were music to my ears…… “I’ll make my chili”……..done!

Only one problem……….he had never written it down into a recipe. So, as he added ingredients I wrote them down. Now let me say that we always have the same spice conversation……

Tim: “ It needs more spice”
Marty :“ Tim, not everyone likes that much spice”
Tim: “Just a little bit more”
Marty: “ No, its fine”…….and then he adds more.

Tim Chili

Turns out, in this recipe he was totally right! It was not too spicy……. it was perfect. Chili powder, cumin, red pepper flakes, and two things I have not had in chili before…….cocoa powder and cinnamon.

I had a big ????? with the cocoa and the cinnamon. They are that in the background taste, you can’t quite pick them out, but they make the dish. We also added brown sugar and salsa…….that added that some’m..some’m………and it all came together perfectly.

Just spicy enough, with a touch of sweet. We did not add any toppings to ours but feel free to add whatever you like……. we ate ours with biscuits…….or as Tim calls them skits.

However you top it or whatever you eat with it, Sweet and Spicy Chili will warm you up, make your favorite team win, and let you have a super Sunday.

It makes a small batch, it will serve 4-6, and if its just for two you can have it again and you know how it goes with chili …….even better the next day!

Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 14.5 oz. can chopped green chilies
  • 115 oz. can dark red kidney beans
  • 128 oz. can diced tomatoes
  • 1 cup salsa
  • 1/4 cup brown sugar, packed
  • 3 tablespoons chili powder
  • 1 teaspoons cocoa powder
  • 1 teaspoon cumin
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon red pepper flakes

Instructions

  1. In a large pot over medium heat, brown ground beef, onion, and garlic. Meanwhile mix together brown sugar, chili powder, cocoa powder, cumin, cinnamon, salt, pepper and red pepper flakes in a small bowl. Add to the browning meat mixture. Cook for 2-3 minutes to let the spices release their flavor. Add remaining ingredients. Bring to a boil, then reduce heat and simmer for 30-45 minutes. Serve with shredded cheese or your favorite chili topper.

Thanksgiving Pizza

The meal was prefect, you spent the days with family and friends…….everyone is gone, the dishes are done……….what are you going to do with all those leftovers????

Make a pizza……thats right……a Thanksgiving Pizza! Everything that makes Thanksgiving special, on a pizza…..say what????? No its true!

So, this is more of  a method than a recipe. Heres what I did:

Gravy for the sauce. Spread leftover gravy over a purchased or homemade pizza crust.

Then top with leftover mashed potatoes.

Dressing and Turkey go next.

Cranberry sauce….as much or little as you like.

Brie Cheese.

In the oven for 15-20 minutes.

Thanksgiving Pizza

And …….OMG its Thanksgiving……… on a pizza! It was the best thing I have ever done with left overs. You know how when you make some thing, and you take a taste and you are speechless …….this is like that. Tim and I both just kept saying…..omg this is soon good!!!

So take all those leftovers, toss them on a pizza crust and prepared to relive Turkey Day again!!!!

 NOTE: You can add any leftovers you want. If you like sweet potatoes, or have leftover veggies…….just toss on what you like best.
