Sunday breakfast…..isn’t it the best breakfast of the week??? You have all the time in the world to relax and enjoy something special. I know a lot of folks like to go out for breakfast, and don’t get me wrong I am one of them………..have I mentioned what a crazy winter it has been here in the mid-west? If not here is winter in a nut shell……..snow, snow. snow……….freezing, freezing, freezing……..did I leave anything out? Given the weather, I have become even more of a home body than I usually am. Seriously, I could stay in the house from Thanksgiving until at least St Patricks Day…….maybe longer depending on the whole groundhog shadow thing. I really, really, hate cold weather. So……… as promised a special meal and story for Valentines Day!

Once upon a time……….isn’t that how all great fairy tales start? When Tim and I first met some 30 odd years ago, we were both in our early twenties and it was the late 70’s. I remember going to a party with a girlfriend and when we arrived I saw the cutest guy in cut off short and tube socks with red stripes……….you really do have to be from that era to understand how totally hot that look was! Fast forward a few years and we both were working for the hottest restaurant – bar- nightclub in the area. Anyone who is of a …….certain age……cough, cough  and from this area remembers Waldo Stubbs. It had that Cheers atmosphere…..where everybody knows your name……..The place was always hopping and especially on Friday nights for all you can eat “Poor Mans Lobster”. So, what to do, what to do……..it snows…..every other day, and when its not snowing,it’s sub-zero and not fit for man nor beast! But the blessing in this, is that, well really there are two blessings…….. Snow Days …..yeah! and Baking….yeah!

I have a renewed joy in baking these days. There was a time when baking was not on the top of my list. See, I was a bakery manager at a local grocery store for a number of years, and after awhile the joy of it kinda disappears.

I always joked that I was a “fake and bake” baker. So many of the products you buy in grocery stores these days come par baked or totally baked and you finish the process or combine items to makes what really can be some amazing items. I remember one of my regular customers asking about the cream puffs that I sold like crazy. She thought that I made them myself, when in reality, the shell of the cream puff came pre baked and frozen, so all I had to do was thaw them, cut them in half, use the bavarian cream filling from the 35# bucket, melt frosting from another bucket and drizzle it across and……. oh la la a cream puff.  Continue reading “Almond Poppyseed Cupcakes-Almond Buttercream Frosting”
