Ahhh………the sweet smell of Spring. Today was the first day that makes me think we mayhave turned a corner, and that warmer weather is on the way. Of course, that would be on the last day of my Spring Break……..back to school tomorrow. It never fails that our Spring Break weather leaves much to be desired. But, I take solice in the fact that the school year is almost over, and Summer Break is close at hand.
So in a tribute to Spring………a Vegetable Sandwich with Dill Sauce. Dill always makes me think of Spring……..I’m not sure why. Maybe it’s just fresh, grassy, and green.
When I worked at the grocery store, the deli made a veggie sandwich that was really good, just several types of cheese, and a selection of fresh veggies. So this sandwich is a small tribute to that sandwich.
I think all sandwiches need some kind of sauce, wether is is just mayo, or something a little bit more adventurous ……….ya need some sauce!
Dill sauce is the just the right complement for this veggie sandwich. Made with greek yogurt, horseradish mustard, and a healthy dose of dill, it makes this the perfect topper for the veggies. Continue reading “Vegetable Sandwich with Dill Sauce”
Shhh! ……….I don’t want to say this too loud, but I think the weather is taking a turn ……for the better 🙂
That means its time to dust off (maybe you will still have to shovel,depending on where you live) the grill. An nice burger on the grill would really hit the spot, huh????
Maybe this Apple Bacon Chicken Burger would be just the ticket. I said it a million…slight exaggeration …….times but I love ground chicken for a burger in place of turkey. For me, it has a better flavor, but if you are a lover of the turkey, please substitute it in this recipe.
As anyone who has used ground chicken (or turkey) knows it can be a little dry, but in the case of this burger the add ins make it nice and juicy. One other tip, I know its poultry and you do need to cook it through, but do not over cook it. If you do, no matter what you have added, it will be dry. A little bit of bacon, onion, sage and maple syrup add a nice flavor to the burger and a topping of Maple Dijon sauce and grilled granny smith apples and wow!!!

1 granny smith apple, cored, and cut into 12 wedges
4 hamburger or kaiser buns, lightly toasted
Instructions
Dice bacon and cook in a small skillet until crisp. Remove from pan to drain on paper toweling. Add onions to bacon drippings and saute until lightly browned. Set aside and allow to cool slightly.
Combine, ground chicken, bacon, onion, sage, 2 teaspoons of maple syrup, salt and pepper. Mix well and divide into 4 burgers.
Place the burger on a grill pan or outdoor grill coated with non-stick cooking spray. Grill burgers 5 minutes on each side or until cooked through.
Meanwhile, toss apple wedges with remaining 1 teaspoon of maple syrup. Grill the apple slices until you have nice grill marks.
To assemble the burgers place burger on bottom half of bun. Top with Maple Dijon Sauce (see recipe below), top with grilled apples and top half of bun.
Maple Dijon Sauce:
Mix together 3 tablespoons mayo or salad dressing, 2 tablespoons dijon mustard, 2 tablespoons maple syrup, and 1 small shallot( about 3 teaspoons). Serve with Apple Bacon Burger.

The weather might be trying to keep a foothold in winter but, I am ready for Spring!!! This winter has been sooooo long, cold and snowy. I am not a huge winter weather lover, but this year was about more than a girl could stand. I will be putting my boots and winter coat away and no matter what happens, I will not put them on again until November!!!!!
Now, my rant is over, on to Spring talk…….I am ready to grill again. I know…….you can grill all winter if you want too, but, I don’t like to be cold ,so I AM NOT going to stand outside in the cold to grill. Sorry I think that was a rant again…….
Burgers, they beg to be grilled. I did not grill this burger, but will most certainly be making the Tandoori Chicken Burgers again very soon…… on the grill….did you hear that Mother Nature?
I have seen these burgers made with lamb, beef, or chicken, but in an effort to begin eating better, I chose chicken. The bread is Naan, an Indian flatbread, instead of a traditional bun. I am sure you can make the bread yourself, but I have found it readily available at the grocery store.
The Tandoori Chicken Burger is flavor packed, and topped with cucumber, red onion, cilantro and a cool yogurt sauce. Wrapped in the Naan, it makes a healthy alternative to a regular burger.
Place the chicken and spices in a large bowl. Mix well. Form into 4 patties.
Place yogurt, mint, cumin, lemon juice and salt and pepper in a small bowl and stir together. Set aside.
Slice cucumbers, red onions, and lightly chop cilantro. Set aside.
Cook burgers on a preheated grill over medium-medium high grill. About 3 minutes per side. You can cook inside in a large skillet also. Grill Naan bread or warm in a skillet or grill pan.
Top the burgers with a few sliced cucumbers, red onion, and a generous handful of cilantro.
